    We had the most incredible time meeting the warmest and most hospitable people our first time in North Carolina this summer. Our thoughts and prayers are with all of you affected by Hurricane Helene.

      We have the roasted bbq pig here in Spain as well, Cochinillo. Should come and try it. Or our cuisine here in the Basque Country.

      Thank you for the prayers & sentiment. Things are so bad in the mountain region of our state right now. My husband & son have been there taking supplies & have talked to some of the locals. The stories are heart wrenching.

    What is so wild is you guys probably literally drove through roads that are not there anymore. Sending prayers to my fellow Tennesseans, the Carolinas, Georgia and Florida. Great video! So glad you guys got to enjoy the south.

      This is in the eastern part of NC which didn’t get hit hard by Helene. The western part is where all the flooding is

      not sure of the banana pudding. too many places use a prepackaged banana custard called pudding. i was so use to mi mum making banana pudding all most totally by scratch. she did use nilla wafers. made her own meringue. im glad to see the banana pudding was a true pudding and not a custard which many think is pudding.... thanks for screwing that up Jell-O

      @@tully6648 I think I read once there is a biological mechanism there (the whole "having room for dessert" phenomenon; most people find they can eat dessert even after stuffing themselves on a main course.) I think the theory is that it's a way to prevent malnutrition back in the day; Cave Man could still get important vitamins and nutrients from fruit even after stuffing himself with Woolly Mammoth.

    Cuban girl here, when I heard the crispy crunchy skin I was in heaven. Every Christmas Eve growing up having a whole pig at dinner was something to look forward to for sure.

      Lechón is amazing! I moved to the Tampa area nearly 20 years ago. My wife’s best friend is Cuban and every Christmas Eve we go to her house for Noche Bueno. Her father always does the pork and he knows to save me some of the skin because I’m from the South and I have the same love for pork that he does.

    I'm from NC and have watched you guys for years and always wondered if you would ever make it to my home state to try some real BBQ. I am so happy you did and had the reaction you did! Thank also for thinking of the people of NC and those effected by the hurricane. I don't live there anymore, but my daughter does and got lucky that where she is, she is ok, but she isn't far from the Ashville area where most of the devastation is, so I got real lucky she is ok.
    Again, thank you for showing the beauty of the state and the kindness and good food!

    I grew up in eastern NC. Cooking a whole hog on a smoker is called a "Pig Pickin" and we had them for special occasions, big family get togethers, etc. Everyone would walk up with their plate and just pick their own meat straight from the animal for either a pork sandwich or just meat for their plate similar to a buffet and it was frowned on if you didn't bathe it all in vinegar sauce. 😂 Good food. Lots of fun too.

      @cg256y9 OMG! I live in California and our neighbor where I grew up was from NC. We did a Pig Pickin for the neighborhood but in a deep pit. She made the best vinegar sauce that was spicy. I have been searching for a recipe because I didn’t get it from her before she passed. She also used it with BBQ chicken. Do you have a recipe or a bottled brand?

    If you come to North Carolina, and knock on the door at supper time, you can bet they'll ask you in and share the meal, even if it's just biscuits and gravy. Course all of the South is like that. We are friendly, welcoming and sharing people. Thank you to everyone across the country, from workers to volunteers, that have stepped up with whatever they can do. North Carolina, Virginia, Tennessee, South Carolina and Georgia , and many others appreciate all you are doing. I live in central North Carolina, but for a 2 hour drive, I could have been there. May God richly bless you all.

      When I was young there was actually a fellow in the neighborhood that used to take advantage of that on a regular basis. One night at suppertime he came to the door at my uncle's place and of course my aunt and uncle invited him to dinner. It happened that my aunt had made homemade mashed potatoes that night which is one of my uncle's favorite dishes. Towards the end of the meal my uncle was getting another helping of potatoes by scrapping the very last of them out of the bowl on a serving spoon. Before he put them on his plate he asked his guest if he wanted anymore potatoes. The fellow looked over saw the serving spoon loaded with potatoes obviously ready to go on my uncle's plate and said, "I believe I will." Somehow my uncle who was not a patient or especially generous man (when it came to sharing food) managed not to lose his temper but he later said he wished he had slung the potatoes at the guys head. We told that story in my family for years always imitating the mannerisms and intonations of the guest in question. So yes you will get fed if you show up at dinner time in NC but be advised that you shouldn't be rude and take the last of your host's food out of their mouth lest you end up with a serving of it thrown at your head in a fit of rage. LMAO

    This has been a great series to watch every week. As a South Carolinian it’s great to see southern food culture on display. Please be sure to be praying for those affected by Hurricane Helene. Asheville NC was hit the hardest. Really devastating to see the destruction of that area. We were hit pretty good too in Upstate SC but we’re doing better than many others are.

Roads, infrastructure, literally everything is wiped out in some of these areas. Would you like the government to use Star Trek replicators to magically create stuff instantaneously? Do you really believe if Trump was in office (or ANY other president) this would be turning out different?

    As someone from North Carolina, I certainly appreciate the respect given to one of our states famous dishes. We give a lot of time and consideration when we cook and food is the backbone of our community for the most part weddings the funerals, family gatherings, you name it.

    It’s been a lot of fun watching you discover an oft overlooked part of America culture (by visitors to the U.S.) in this series. So many people who do these travel vlog style trips to the U.S. just go to NYC, LA or Vegas and then think they know what the U.S. is like and they have no idea. You guys do it right and you’ve only seen the tip of the iceberg.

    Collard greens can be bitter. You’re supposed to wait until after the first good frost before you harvest them or they’ll be bitter. As strange as it sounds it does make a huge difference in the final product.

      I cook them with lemon juice that cuts through the bitter. Maybe add some tabasco vinegar.

    I'm a lifelong North Carolina from several generations of North Carolinians.. I grew up in the Piedmont of NC where shoulder bbq with tomato based sauce sold but my parents are from Eastern NC. I look forward to it when I visit. Whole hog with vinegar based sauce is the best in the state! And I LOVE collard greens.

      The only thing red that should be in Carolina pork barbecue, is possibly some red pepper flakes. I was a northerner who went to college in eastern North Carolina many years ago, and absolutely fell in love with the BBQ there. Now in Virginia, and bless their hearts, they try . . . But . . .

    There’s a Cheerwine Festival every year in May in Salisbury, NC. A half hour away is the town of Lexington, which is renowned for its “Lexington style Bbq”. They also have an annual festival coming up at the end of Oct.

    You guys should go around the northeast in summer time, Maine during blueberry season is so fun. You can hike mountains and eat wild blueberries, go into town and get blueberry pie/soda/beer, so much beautiful nature as welk from kayaking with seals to rock climbing, or skiing in the winter. All along the northeastern coastal cities and towns you'll also get great oysters, clams, calamari, clam chowder, lobster, seafood generally. You could hit up Buffalo NY for the og Buffalo wings. Next jolly tour!

      @@ypw510 It's not always used as an insult. It can be used as a genuine compliment. Usually, the most common way it gets used is when someone, usually it's a relatively young child, tries to do something that they think is nice, but ends up making a mess or causing some kind of disaster.
      For example: A 7 year old boy wants to try to clean up after dinner and tries to wash the dishes for his grandma. Instead he drops a plate and manages to get water everywhere all over the sink counter top. Grandma might say, "oh bless your heart sweetie, you don't need to do that I'll get to it. Now the counter's all wet, could you go get me a towel?"
      Is she insulting her grandson? No. It's more of a way someone can say something nice while frustrated to avoid yelling at someone.

      Watching Jolly tour the South has introduced me to several variations of nanner puddin' i couldn't imagine until seeing it. In Texas they throw in pecans. In NC they bake meringue on top like a banana cream pie. In Missouri...well the Jolly boys haven't made it here yet, but even we know not to use that boxed pudding that pretends to be custard. 😃 Have fun on your trip.

    Love this series! SO glad they got to try whole-hog Q. Plus, they got to have Cheerwine the way it's meant to be, from cold glass bottles! That's a proper southern feast right there. :)
    And yeah, Collards are something of an acquired taste. The main thing is that the vinegar and smoke are meant to cut through the fatty pig.

    I have lived in the South my entire life and the last 20 years in North Carolina specifically. I was so glad to see you all do NC BBQ. He did right by you with the dishes he selected. In NC the pulled pork sandwich is definitely a staple and the fact that he gave you Cheerwine to drink was the “cherry on top”, pardon the pun. I love collards but it is definitely an acquired taste and also a dish for which everyone has their own recipe. So glad you two enjoyed the food and really glad you guys took a road trip through the South. I maybe a bit biased but no one can beat the South for good tasting bad for you comfort food. In the words of Jed Clampett “Y’all come back now, ya hear.”

    Many of us don’t put vinegar in our greens. We’ll throw in some pork, salt, and a bit of sugar to cut the bitterness. They will cook all day to become tender. I hope you’ll get some of them, one day.

      It's very regional or even family to family -- I'm from georgia and greens always have vinegar in them, and not just a little dash. that goes in there along with pork, salt etc.

    I love Cheerwine, but it sucks I can't find it out west. I used to live in Tennessee and you almost could never find it there until recent years. I agree with Ollie's statement about Cheerwine and Cherry Coke. Cherry Coke is my go-to soda, but I do wish it had more cherry flavor like Cheerwine does. EVERYONE, any of you that likes cherry-flavored sodas, try out Cheerwine anytime you ever visit the Southeastern states. You'll find it everywhere in North Carolina, but it has been spreading to other states in the southeast.

    In defense of the greens: normally, when I've made them/eaten them, they aren't outright vinegar-y. The primary flavor comes from whatever smoked meat was used to season them (ham hock, smoked turkey wing, etc.). A little bit of vinegar is added, but not a lot. Instead, a bottle of hot pepper vinegar is served at the table for people to add as they choose. Awesome vid as always!!

    With collard greens, I moved to NC in middle school. But I was introduced to collard greens the right way, so I fell in love with it immediately. I treat collard greens like kimchi. By itself, it's okay. But with meat or something fatty and oily, it is a great combo. I don't live in NC anymore, so I miss it.

      100%. I think of Chimichurri and pickled red onions in a very similar light as well.
      Pops of vegetal/herby acid that “brighten up” the flavors around it but isn’t something you’ll necessarily eat by itself

      Collards are easy to grow in your garden. I grow them but mostly give them away because I prefer mustard greens. I stir fry the mustards sometimes. Delicious.

    I live in Upstate South Carolina and we got hit pretty bad by the hurricane. On another note, it’s definitely nice to see that you guys finally got to experience some Carolina BBQ and love. Collard greens are delicious but it definitely matters on who is cooking it.

      Yeah, a lot of restaurants have moved toward really over-the-top vinegar flavors with their collards. I always grew up with them getting most of their flavor from ham hocks, so they had a much more smokey, porky taste, with the vinegar served in a shaker bottle on the side. I think the move toward healthier eating has seen the restaurants try to go to something a little cleaner on the palette, but not as tasty, in my opinion.

    Collard greens are definitely what some will call an acquired taste. Some people are born loving them their whole life - I couldn't eat them for the first 30 years; couldn't stand the taste no matter who made them, but now I guess I finally got a taste for them and now I get them at every opportunity.

    If you’re in the south and looking for BBQ, look for the ones that look like a concrete bunker with a hecka lot of smoke going up from the outside kitchens and pits. The paint is often peeling but you’ll be able to tell by the lines what the quality is.

I am accustomed to ridicule for living in Kansas but I accept that. Nobody believes that Kansas has some scenes of real beauty. For example, the Great Plains undulates with little hills and little valleys all around. In the right season you can go out to the western half of the State stand on a little hill look out and see as far as the horizon, golden fields of waist high gently swaying back and forth. It all waving wheat; you can see this 360 degrees. The sky is an intense blue with eagles circling around. It is a world of golden topped with a hemisphere of blue. The wheat sways in the wind and makes a very pleasant shushing sound, very soothing; something like ocean waves. The ripening wheat has a faint, very pleasant arima, There are at least two more very, very beautiful spots but I am keeping that to myself.
