Did yall know that Alfredo sauce isn’t actually Alfredo sauce, what we created in the us is a rip off of the authentic Italian Alfredo sauce, witch is simply unsalted butter, parmigiano reggiano cheese or pecorino Romano, an a generous amount of pasta water that u get from cooking ur pasta in nice boiling water what u do is emulsify all three together to create a velvety, thick, delicious, nutty, etc sauce that is very easy to digest on ur body and is a instant family favorite. The sad thing is Americans took the original recipe back home to America and couldn’t achieve the emulsification needed to create the real Alfredo sauce, so they started adding cream, etc till they achieved something that loosely matches what they found in Italy. Even though they created a completely different dish of its own, because the true fettuccini Alfredo is very rich, light, etc all because of it’s simplicity in ingredients the good quality unsalted butter, the amazing quality parmigiano, an the pasta water they create somthing that shows u how somthing so simple can be so delicious! The creator of this dish is chef Alfredo di Lelio an Italian restaurateur who in 1908 in Rome, served the dish to two Americans who fell in love with the dish the rest is history as they say !
