There are other frozen fruits like berries pineapples etc if you don’t like fruit Start with Whole plant Foods (keep it simple) season how you want and pick and choose what you want. Good luck!
I would make sure you are keeping track of getting adequate essential amino acids. There are a lot of plant-based foods that satisfy this, but it is a lot easier to take them in supplement form. Make sure you are getting enough metals in as well (iron and magnesium)
You're doing great just by starting. The smoothie was great ingredients maybe add bananas to bulk it up(if you just starting out with smoothies I would keep them small like the cup you blended it in is enough). That was a good snack salad. You definitely need to eat more if you're trying to stick to this lifestyle long term. What you had was very low calorie. Meal ideas for a day if you're intermittent fasting 12pm-Your smoothie you had 2pm maybe a raw fruit bowl or the salad you had...maybe add some chickpeas for protein and avocado 4-6 Dinner... chickpea salad sandwich with sweet potato fries( baked or air fried) You can find plenty of recipes for vegan chickpea salad mix...add lettuce, tomatoes, red onions...you can toast the bread... sourdough is a good bread. If you don't want bread you can eat the chickpea mix on a bed of lettuce. Seasoning is going to be your best friend. Good luck on your journey.
