- In this series we're going to share how we harvest and preserve homegrown and wild food to feed ourselves mostly from our gardens and the woods - what we lovingly call "dealing with the abundance". This week we're harvesting peppers and preserving them in chili paste and hot sauce!

You guys have built such an impressive life. I grew Serrano peppers in my community garden and have two jars fermenting on the counter right now for hot sauce

Haha, I was listening to this with one ear bud in and I was so confused as first.
You know the stem end of the long peppers can be fermented to make a wonderful chutney. Leave them in a crock and cover with a handfull of salt and let them ferment for a few weeks. As they soften and ferment the aroma of the peppers will bloom and when the bubbles stop you can leave them whole or chop them into a small dice. Store in the fridge to keep them crisp tender or on the counter if you like would them more tender.

I’ve tried many times but have never had any luck getting vegetables of any kind to grow in pots. I do just fine growing them in the ground. So, good on you! 🤷🏽♂️

Me and my father have realized that for some reason peppers of really any kind so incredibly well in our garden every single year. So next spring we are going to go all in and see how many peppers we can grow at once. And we joke to each other that during the apocalypse we will be the pepper traders for anyone who needs flavor in the wasteland 😆
I definitely want to grow more peppers next year.

How do you preserve the paste and sauce in jars? What do you have to do for them to not go bad?
Is it enough to boil them?
How long does the first sauce (the chilli garlic one from the Italian peppers) last? Do you just store it in a jar in the fridge, or on the shelf?

Do you like to make a lot of Korean dishes like their stews? Just wondering since you said you're a hot head and already make your own chili paste. Most of the Korean recipes I know use a lot of chili paste and chili powder as a base.

We usually store these in our fridge, but you could can them if you don’t have space

Black pepper can be to hot sometimes
Just to put it out there, capsaicin is also a neurotoxin and can lead to permanent damage if overconsumed especially in non adult mammals. Not that we can't take a lot. But still, be mindful.

I discovered a short, and then once i subscribed, i randomly found this hot sauce post. I am so happy to see someone who isn't getting naked. Being vulgar.
