It will depend on what those 80 devices are. It should be able to support that number, but obviosuly "wihtout having issues" is a little difficult to answer. If they are all trying to stream Netflix for example then it is going to stuggle. If they are IoT devices and not really doing much all of the time, then it will be OK. I hope this helps a little further in your thinking.
It will depend on how the connection is presented to you, but I would imagine you are presented with an ethernet port to plug in to. You should be able to run a cable to the WAN port of the Ruijie device and then on the Ruijie device configure the settings you need, ie PPPoE or just leave on DHCP for the WAN port. It may be more tricky if you are given a VLAN to be on for the WAN side of the connection.
The EW3200GX Pro is a 4x4 router with 8 Antenna. The EG105GW-X is a 2x2 router with 5 Antenna. They are both great routers, but you will find the performance of the EW3200GX Pro is greater than the EG105GW-X. I hope this helps.
The EG105GW-X is a router and not a file sharing device I am afraid. If you are wanting to access files remotely then I would suggest you use the device to create an inbound VPN which will then give you access to your network.
