The Prophet Muhammad (peace and blessings be upon him) said: “Eat olive oil and use it on your hair and skin, for it comes from a blessed tree.” (al-Tirmidhi, 1775)
I think it is because of the smoke. The pure olive oil doesn't smoke much at all. It was plentiful (easier to obtain) in that time and in that region. God wanted pure olive oil for the Tabernacle. -- First press of the olives, strained multiple times. very little smoke.

Pomace olive oil is the last pressing rather than the first (so cheaper) and actually works better for olive oil lamps (so they say).

Extra virgin will smoke less, but any olive oil should work.

Can I use canola oil?
Yes any inexpensive vegetable oil will work. Even Crisco shortening or the cheap knockoffs of Crisco.
what about using other types of veggy oil?
What about it? They all burn.
Canola oil works fine too with cut facial cotton swabs
