Google it if you're not sure what cake flour is. you'll need your own brine recipe.. but yeah.. i hear sweet pickles is good for a 3 day soak and then a further 12 soak in buttermilk.
My grandmother had a homemade rub specificity made for ribs and I happen to be a chef. I used pork ribs with the rub of course, bought some sandwich bread from my friend who owns his own bakery, got some of my homemade BBQ sauce and homemade pickles, took the bones out of the rack of ribs, cut it in 4ths cause it was absolutely MASSIVE!(that’s why I smoked the ribs, for the bones to come off easier) I split it between my wife and 2 kids and it was absolutely incredible. I incurage you guys to make your own rub sandwich. Totally worth it.

Also, I noticed that you put the ribs in the oven for 20 minutes at 300°F even though it has been sous vide-d beautifully for 12 hours at 165°F. Wouldn't that defeat the purpose of sous vide? When I make this recipe myself, I might try torching or grilling it quickly to glaze it because raising the temp MIGHT make it less tender. HOWEVER, these ribs definitely look tender as fuck. This is definitely on my list of things to try!!
