Just like how culinary art has evolved over the years, so has bartending. There are competitions for bartending, even extending to world class (name of the competition) competitors. These people are not your regular "let's get fucked up bartenders" who just serve you your beer or drink. They take pride in the drinks they fabricate just like how chef's do when creating new options on the menu. They take pride in decorating the drink, garnishing it so that the scent enhances the flavor because the smells affect how something tastes; this is similar to a chef's methods of plating. Some people take bartending as a serious profession. It's their lives and this is how they want to rise to the next level. Why must we always judge irrationally, and be so quick to judge others. Pretentiousness has a place in this world, and there are a lot of people who actually appreciate it.

You add it to the drink depending on your taste. You first lift out the nest and take a sip of the prepared drink and then you can add more bitters if you'd like. This is to give respect to the bartender's experience in preparing cocktails. I'm pretty sure that the eggs are chocolate or something similar so you can eat them, and the sugar nest if you'd like. People who pay for this cocktail are most likely rich enough to just let the decoration go to waste though. I think if you ate them you'd be advertising that you're not rich enough to have this kind of treatment more than once.

All those pretentious garnishes are pretty much nonsense. All you gonna do is put those aside and drink anyway. The drink is probably delicious, but no need to flex. Making a tasty drink is good enough.
I would not want to be served by her in a real bar.
