That process is called digitizing. It is a lot of fun, but it does have a definite learning curve. I have a lesson for sale on my site that digitizes a trio of Christmas ornaments. One of those sets of videos is available for preview.
LOL - i'm currently watching The Good Place, so that made me laugh. There's a lot to learn. A couple of tips. Start playing with the different tools - you've got to get a feel for what they do. Then you need to do stitchouts to understand how the physics impact what you've made. I did a lot of watching good designs stitchout and studying them in the software. It all works together. You'll get there!

How would you remove if the file is one color?
On the modify tab, use either the Freehand select or Freehand Point select tool to select and delete the lettering.
