Got ingredients today, easy to make, used blender to mix easier since I have Carpal Tunnel in both hands, pie came out DELICIOUS! Couldn't find a coconut custard pie anywhere in town so I searched RUclips and found this recipe. Followed the directions, it was easy as pie and they came out great. Too bad the only lasted a day and a half. Tomorrow's project, two more pies.
I made this coconut pie for Thanksgiving, it is the best. I used 2/12 cups of sugar instead of the 3. I did not want it too sweet. Thank you for sharing!!!

A picture is worth a thousand words; the recipe was easy and straight forward and the finished product looked great, however, I needed to see you cut and eat a slice of the pie. That would show the texture and consistency and the joy of your baking. ☺🌷

Yum! Tried and True. I halved the recipe for 1 pie and sweetened to my taste with a little over 1/2 cup sugar. It is delicious. Now this is in my go to recipes. Very easy indeed. Thank You!!

Most 9” deep dish pre made pie crust are actually 8” - they say 9” because they measure the outer rim and that’s incorrect- you measure inside opening.. I will be trying this coconut custard pie for sure!

My favorite pie, above apple. Used to eat a slice at a basement restaurant across the street from my small apartment in Pottstown, PA in the early 1960s. Mrs. Smith's shipped them from Pottstown for years, then went away. Will never forget those early memories, post University and working for Honeywell there.

Well, I haven't made this yet but from your recipe I will for certain. It looks great and much easier than many recipes I have seen. Like you, I don't like coconut all that much EXCEPT in coconut custard pie. I will report back with my results when I make it. By the way I think we have identical whisks. LOL.
Hi Ron, I had Thanksgiving at a friends house. She had coconut cream pies as one of the desserts and spent all that time stirring it and baby sitting it. I must say, mine was better. Recipe looks great Linda, they are in the oven as we speak! I'm just nervous as i didnt have evaporated milk (forgot it at store) so I had to use whole milk. Fingers crossed!

Linda, they turned out just great! I will use evaporated milk next time to see the difference but I can say that using whole milk did work fine, one pie is gone already! 10/10, I HIGHLY recommend anyone who likes egg custard pie to try this. My family doesn't care for egg custard pie but everyone just loves this. Lovely texture, flavor and so easy...thanks again!
@@KMPopsicle Most Custard pie's call for whole milk. I usually use 2%(bc that's what we us) and it works just great. And if you don't like Cocanut leave it out. Just talking from my own experience I'v been cooking for over 55 years. God Bless all!!!

Making this right now. I didn't have evaporated milk in the pantry, I did have half and half (wasn't sure on what the outcome would be, so I used buttermilk, hoping it will turn out ok.

Especially older cookbooks usually found at yard sales ! .. they will say use " Oleo", often, my daughter asked what's oleo !! in the 1970s, Grasshopper Pie was a favorite. Marie, I've never made it any other way. You can use regular whole milk but the pie won't have as rich of a flavor. I hope this helps! TFW God Bless, Linda
2 cups (16floz/450ml) full fat milk or low fat milk* ⅔ cups (5oz /142g) white sugar Add the milk and sugar into a small, heavy bottomed saucepan. Heat it on a low heat until the sugar has dissolved. Once all of the sugar has dissolved bring the mix to a simmer over medium low heat. Do not stir once the mix starts to simmer otherwise it can crack and crystalize. Gently simmer for roughly 35-40 minutes, or until the milk has darkened to a creamy color, has reduced by half and thickened slightly. You may notice some foam forming on top, gently skim it off with a spoon. (if there are sugary bits hanging around the rim of your pot don’t stir them into your condensed milk, this can also crack your mix) When ready, remove from the heat and pour into a jar to cool. Let the condensed milk cool completely before putting on the airtight lid. Just note, it thickens up alot after a few hours in the fridge. Store in a labeled jar in the fridge and it will last for 6 months.

Did you bake them on the cookie sheet?
yes, I put both pies on a cookie sheet to bake since it's much easier to get in and out of the oven.

Ok, I did make this..I have to say...it would have been better, if I had poured all of it, in 1 pie crust..I did have one pie crust deeper than the other...lesson learned.

Can I use light brown sugar instead of regular sugar or do you suggest regular sugar? Did you ever use light brown sugar in this recipe before, if you did which one taste better to you?

is there any other milk than evaporated milk,coz here in our country we dont sell evaporated milk ,please recommend another milk i can use ???
Marie, I've never made it any other way. You can use regular whole milk but the pie won't have as rich of a flavor. I hope this helps! TFW God Bless, Linda

Try heavy cream instead, that is what I use for mine.
2 cups (16floz/450ml) full fat milk or low fat milk*
⅔ cups (5oz /142g) white sugar
Add the milk and sugar into a small, heavy bottomed saucepan.
Heat it on a low heat until the sugar has dissolved.
Once all of the sugar has dissolved bring the mix to a simmer over medium low heat. Do not stir once the mix starts to simmer otherwise it can crack and crystalize.
Gently simmer for roughly 35-40 minutes, or until the milk has darkened to a creamy color, has reduced by half and thickened slightly. You may notice some foam forming on top, gently skim it off with a spoon. (if there are sugary bits hanging around the rim of your pot don’t stir them into your condensed milk, this can also crack your mix)
When ready, remove from the heat and pour into a jar to cool. Let the condensed milk cool completely before putting on the airtight lid. Just note, it thickens up alot after a few hours in the fridge.
Store in a labeled jar in the fridge and it will last for 6 months.
