Thank you for teaching how to make a knish. I havent had one since high school living in Queens NY. No more deli stores focusing on good sandwiches and Jewish food. I love knishes and will give it a try. I am Greek and love all ethnic foods. I think you are a good educator.

When I first saw Leah in this video, it was my thought she was Indian. Sadly where I am I cannot buy knishes since Ashkenazi Jews don't live here. I thought of this when someone from New York mentioned them to me. Spinach, kasha and broccoli knishes are ones I like. Other foods are difficult to find here that I enjoy. Yet with the minus there are pluses of living here. Thank goodness for online retailers.
What's the point of using boiled, pureed potatoes in addition to a mountain of potato flakes? It doesn't appear to be any part of a flavoring or texture component, so why the redundant extra work?

So in your recipe it says 1# russet potatoes. What does that mean? Lbs?
Yes, 1# is 1 pound (as opposed to #1 russet potatoes - that means first quality or hashtag russet potatoes!)

I think she said the natural potatoes have better flavor, but the texture of the potato flakes was smoother.
