- Bibingkang Malagkit with Coconut Custard Topping
Ingredients:
2 cups glutinous rice
1½ cups coconut milk
3 pcs. pandan leaves
½ cup coconut cream
1 cup sugar, or to taste
banana leaf, to line your baking pan
Coconut Custard Topping
3 egg yolks
200 grams sweetened condensed milk
150 ml evaporated milk
150 ml coconut milk
2 tsps. corn starch
a pinch of salt
a pinch of orange (or lemon) zest, optional but recommended 😊
