I am curious: Do I need to create a complete table of all my stocks and information I want to leverage later in my spreadsheet, or could I create a new column in the middle of my spreadsheet that contains stock prices? All examples I see are set up like you've done here.

I've searched everywhere else (I think), is there a way to set the exchange you want to use, and just restrict to that? Eg, I'm only interested in the ASX (Australian Stock Exch), as I run down the column I just want to quickly enter the 3 character tickers, it works for the most part but I'll always have to go back through carefully to find the random ones where it's picked up other exchanges. It seems like something simple that would have to be an option, I just can't work it out...
I'm not sure why you don't have it. I checked my M365 Business account and my M365 Personal account and Stock data type is in both. You should be able to access Stock from Excel on the web. Possible try that.

After poking around some more I think it maybe because in Excel under Account > Account Privacy > Turn on Optional Connected experiences is turned on there is a message that says "Some privacy settings are managed by your organization. These are optional connected experiences that you can control because your organization has given you this option" While I have Office 365 on my home PC I am signed into it using my work account email, I suspect the office then somehow enforces what connected services I cannot connect to based on restriction on my work org and Stock services is one of them that is disallowed maybe? And i can access stock from Excel Web (free version) and then download it to PC and edit it, but it wont allow any new stocks to be added though from excel on home PC
