It's going to be tough getting a Seki City K390 from my pocket for anything else. It doesn't seem to chip, for it not being stainless it's not prone to rusting with only minimal upkeep, and it strops back with leather. It's not even a pain to sharpen and it keeps an edge long enough you don't need to do much but keep it clean. And being an ongoing production and not a sprint run I'm not worried about using it up and not being able to replace it. I'd be excited about 10V or 15V but being sprint only just sucks out the joy.
I've never had rex121 micro chip on 400 super vitrified and so long as it wasn't maxamet from the first couple runs I've never had it micro chip on the stones neither. That goes for f100 and up resin diamond or CBN bonded stones as well. Now on diamond plates you can definitely get micro chipping on larger particle plates but I do not use my diamond or CBN plates for steels like rex121, maxamet, z max etc and that cuts down on the potential to micro chip at lower grits levels. This is going to be a very interesting comparison. I really like steels with a high amount of vanadium carbides. For example my favorite stainless for a folder is S90V. It holds a very aggressive toothy working edge forever and doesn't take edge damage as easily as other high edge retention stainless steels. I suspect 15V will come out on top because it will be close in edge retention to the others, but will have a higher toughness. I also expect it to take a little more time on the stones.
The 15v is much finer edge still retaining that hardness, I carry a maxamet manix 2 lw every day or k 390 stretch and 15v is much closer to k 390 in that regard in edge amd the grit to refine it. Excellent take on that ….👍
Wish u would have thrown k390 in also as u speak about k390 so highly. Is it true the lightweight model only runs 1 washer on 1 side? Isnt that your second 15v para? Is there a book or person i should look into for a brand new person to sharpening? Youre the best knife tuber😊

I REALLY wish they had a 15v option for the Sage 5. I want to like the PM3, but the ergonomics just aren’t great for my XXL glove size hands. The AWT scales help a bit, but it still doesn’t reach the level of comfort as the Sage family of designs.
Yerba Santa extract for your lungs, trust me. I used to wild harvest it and have a lot of experience using it as medicine. Its not widely known but is the best I've found for lung health. It will completely cure bronchitis in 1½ weeks, and quickly heal any other lung issues. Its inexpensive.

Try 13 degrees per side and finish with at least 1200 grit (mine is Venev so no idea what others are) Then strop with 1 micron and then .5 micron. Scary sharp. That edge has held up for a year and a half with my son using it. He beats it like a rented mule.
Really hoping to try out 15v - would pull the trigger on a native or even mule just to get my hands on it while money is tight. The real grail (since I am fangirling) will be to test those vitrified diamond stones Shaun has put out.

I don't see 15v going away anytime soon. And the current "sprint run" isn't a true sprint limited to 1200-1400, they're making more of them than usual

I love Maxamet and 15v (I actually own 3 Maxamet knives), and I have to say Rex 121 is the only steel that I truly hate sharpening.
