      Whenever I find these, they're always infested with maggots unfortunately

      I try to find them emerging and usually pick before fully mature.
      Our local environment may play a role as well.
      I've noticed a higher percentage of chanterelles without infestation in northern Indiana than in northern Michigan for example.

      @@FoundYouForaging I'm on the West Coast and usually go about a week after the January rain. I may go earlier to try to find less pest-ridden Violet Chanterelles. On the other hand, the hedgehogs, yellowfoot, and black trumpets in the same trip are in great condition --you win some, you lose some. Glad to have you!
