Oh they look amazing for a first go. Just think of all the lovely flavoured sausages you can make now you have done the basic recipe. Remember Wall's and Richmond sausages when I was younger. Have you heard of Cowman's Famous Sausage shop in Clitheroe in Lancashire. They have over 70 different sausage flavours. Well worth a visit if you both fancy a day out. Do check it is open before travelling over if you decide to take a look.

Looks like proper sausage a lot better than the rubbish in the shops.my nan made them with first mince. Grandad Said something chunky for breakfast we even had sausage roast as kids 😅😊 .
I got a free mincer and extruder with my Kmix many years ago and always wanted to try this. Your step by step method has given me the confidence to try this and hopefully will substitute the supermarket sozzies for my own, healthier ones. Cheers guys. Gill X

Hi ...... I've a couple of suggestions (yes, I've been making my own home made sausages & sausage meat for some years). 1. I don't bother to re-grind the meat. It's fine. 2. I use home made dried breadcrumbs. 3. I use a 50/50 approx mix of shoulder & belly. 4. After you've made a mix ... fry off a small patty in a pan to check if you've got your seasoning right. You can always add more in - you can't take it out. 6. I tend to make as long as possible filled 'sausage' ... don't over fill and then I tie them off along it's length. 7. I use the same mix for sausage rolls and the air fried scotch egg recipe I pinched from you. 8. Be as inventive as you like. Roasted red pepper and paprika is a common seasoning for me. 9. I bulk buy the pork fresh from a very good butcher. So quality at a discount price. I make big batches once or twice a year. 10. There are no preservatives (other than salt) in home made sausages, of course. Which is both an advantage and disadvantage. You can't rely on them to keep as long as the mass produced variety. Can freeze them though if the pork you've bought is fresh (see 9 above). Anyway, back to what I was looking for. You must have a cornish pasty recipe on your list somewhere.

I 've got a machine specifically for grinding and making sausages but I think I might get the attachment for my kitchen aid because it looked to me that it worked a whole heap better. Also I liked the recipe you used better than the one I used. So, what did you think of them in comparison to ready made sausages? I think you made an excellent job of them, especially as it was your first time, well done you ❤
I have to admit they were like sausage we used to get as a kid proper meat sausage from the butcher and when we worked out the price it came to around £8 so for 13 sausages not expensive x
I'm a learner doing sausages too. Important thing is have your meat 50% frozen, stops fat from smearing. No Sage!!! 😲 10/10 for 1st attempt! you can play around now with salt, spice ratios. See your wine racks rather full...lol......you like a wee slurp in the evening then? 😅

Plus being homemade, you know exactly what you are eating. I'd go with the real casing too, rather than the synthetics. I'd be proud as punch if that was my first effort, you have inspired me. Well done mand, can’t believe that’s your first attempt, the sausages look amazing. The new mincer attachment looks good. When I worked in the butcher shop many moons ago, we used to push the last of the meat through the mincer by putting some suet in behind it. I believe you can do that at home by putting some bread through at the end.❤ Great job getting the skins on too.
Love this and I’m so glad you showed us your first attempt. I’m a home cook with every gadget but I’ve never tried sausages yet and my 14yr old loves them so this is my next mission. Totally off the subject of saisages, in the pre-Christmas - probably six weeks or so beforehand - how about making some proper Piccallily. I used to supply the whole family with jars of it at Christmas for the traditional 'cold cuts'. It's hard to beat homemade anything really ......... although my Granny did say 'Eeeeh, our Diane, that's as good as Heenzez (sic)!' In fact, that was high praise in those days I reckon! Di x

As I know the kitchen aid can be expensive , but seeing what you can do with yours I’m slightly pulled to get one. Husband bought me an all singing all dancing meat grinder that comes with the seasoning sausage skins and several other fittings like you an slightly anxious over using it but after watching this I'm pulling it out and giving it a go. We both love sausages but it's hard to buy a decent sausage these days so here's hoping
Well done!! I'd like sage in mine instead of thyme. I've seen people fry off a small amount before it goes in the casings and taste it to check for your seasoning. Wonderful!!

It's getting really hard to buy sausages that aren't covered with that disgusting seaweed agar coating, instead of proper skins, so thanks so much for this. Beddy lads Lass great effort its not easy making homemade sausages but it looks well worth it canny lass. My only contribution to a good porker pet is to add crushed fennel seeds to the pork meat. Its certainly a leg tremblar me hinny especially with 15 pints of brun ale, greet 😂😂😂🎉. Next time you have a banger in a bun , try mixing a little hoisin sauce with BBQ sauce and a splash of Tabasco with those crispy deep fried onions and sweet pickled cornichons 😋😋😋
I long for decent sausages, my wife buys Morrisons sausages of different flavours and to be honest I hate them but I wouldn’t say anything. Perhaps different flavours is something you could experiment with.

Your sausages looked so scrumptious... i cook my pork sausages in my air fryer and they are scrumptious. 200o for 16 odd minutes.
Yes was worried about the fierce heat of the airfryer that's why I did them in the pan x
