I always found it odd that Toph who hated the rules, Ba Sing Se and her parents' controlling attitude decided to become *chief of police,* and from what we can see in this flash-back, act very professionally and seriously about it. I guess one explanation is that she is kind of a battle junky, so being a police officer allows her to use her powers and fight in a legal fashion - though this hasn't particularly been shown by this flash-back either... - I always felt like Toph would be 100% better off as a teacher (a demanding and harsh one, but an efficient one), given how well she taught Aang earth bending, and given that it makes sense for her to want to teach others how to metal bend and sense the vibrations in the earth. I mean to me it'd make more sense if she had become the head of a new Earthbending school rather than a cop. Or even perhaps just go back to her Earth Rumble days if she wanted to fight (or all of the above !)
I think she just wanted to kick ass. If she becomes the chief of police she becomes above the law in a lot of way and just continues to punch and kick bad guys. But eventually she kinda had to become more serious about the job which you see. There are moments where people have to act like adults. But we see Old Toph and she is pretty much Toph
I think the main thing is that these people actually grew up. Sokka and Ang aren't the same idiotic goofballs like they used to. The whole point of ATLA was to show the life of children being called to a much bigger purpose than themselves. Yes toph didn't like the control her parents placed on her but she also didn't like Ozai's desire to be the ultimate dictator. Her issue with her parents is that they refused to acknowledge that she was simply a capable human being. If they at least gave her that, I'm sure she would've been a lot more content with her homelife. Her issue with Ozai was matter of morality. He wanted to control, kill and/or brainwash any person that didn't fall in line. If she didnt like rules she wouldn't have gone on this journey with Ang and the gang unless she understood to some degree that world needed some degree of order. she wasn't an anarchist. She just wanted to be seen as more than just a tiny blind girl who needed protection 24/7. she wanted respect
"I am the solution" is one of my favorite moments from book 1

Older Aang's design is based off the franchise's co-creator Michael Dante Dimartino
