Red curry paste is so versatile and can be used in lots of Thai dishes. Ideally this thai red curry paste is made fresh and best to use immediately, but you can also keep in the fridge for up to 3 days before using.
Or if you want to make this vegan thai red curry paste in a large batch, it is best to store this in a freezer.
I'm using a food processor to make this to make it easier, but you can definitely grind this vegetarian red curry paste manually with pestle and mortar.
*Ps : To make it easier for you to grind this paste ,slice the tough ingredients like lemongrass or galangal crosswise.
How to make red curry paste. you'll need :
1 tsp cumin
1/2 tsp white peppercorn
3 big red chili
5 bird's eye chili
1.5 tbsp galangal
3 lemongrass
5 garlic
10 shallots
1 tbsp lime rind
1/2 tsp coriander
2 tbsp oil
1/2 tsp salt
