I think that is to prevent loss of energy due to feedback from the rest of the circuit. The bridge rectifier would become a load for the capacitor without the diode.
By bridging at the rectifier one pole of an AC-source and one of the DC voltages with a capacitor, the DC output voltage will double. Depending on the value, it needs little time, till the capacitor is charged and the circuit produces output. Also the cap should not leak. The voltage doubles, the current is half. Efficiency is in theory higher, because one diode drop is virtually eliminated. With a stepper, given a fixed rotation speed, it is also possible to chose a cap for maximum power point, if the output voltage is below the voltage of maybe the battery without that cap.

To increase the voltage connect the sensor in series and to increase the current connect them in parallel. So better to have both of the combinations ex: connect 5 peizo in series so called as 1 array . You have create a multiple arrays. Finally connect all the arrays in parallel

while using a free version, you can't do automatic routing for larger boards. you can do the manual wiring. you can use eagle 6.5 version, its crack is available. you can search on google.
don't use components from the library, then you can make larger boards. Let's say you want to use a relay, simply measure the distance between the relay legs, and make place via's accordingly and that's it. i do the same exact thing while making larger boards.

you can charge some capacitors and then light up some led's to explain your idea. for real implementation, you will need some good high quality piezo sensors and you will need to increase the number.

for one way charging, we use a diode. Actually, it's just a research kind of project. I have used more than 78 Piezos and still, I wasn't able to charge even the cell phone battery. Even a capacitor takes time to charge. not practical for battery charging. But if you can arrange some high-quality piezo sensors then you can.

you can generate even higher voltages. but the main problem is the current. for a 12v motor, you will need to use some large value capacitor. charge the capacitors and then you can run a small dc motor for a second or two.
this is just a research kind of project. But if you can arrange high-quality piezoelectric sensors then you can run a small 12v dc motor. You will need a lot of sensors connected in parallel.
That's a whole lot of effort, for extremely little reward. listen... get two thin A4 sized plastic sheets (pvdf or whatever). paint (or spin coat) one with graphene oxide. slap them together, and slap a current collector (like aluminum) on both sides of that. connect your wires to (what you may think is a fancy capacitor) it, then wriggle your A4 thingy while it's connected to your multi-meter. Your welcome. Go make a flag.

What is the purpose of the diodes? Don't the rectifiers already convert the piezo AC into DC?

Then u step down the ac voltages using transformers, and you can also use voltage dividers. Watch my tutorials on voltage dividers and voltage sensor
