They should add this to the series X and PS5 as a bare minimum on minecraft. On PC we have a bunch of extra customization but on console they have nothing. At least this should be the bare minimum.
they remain flat because the thing is you dont get a compatibility for that you see for packs to have bump mappin or normal mapping you need to do it manually block by block
imagine using a neural network that makes maps automatically. You could train it using a normal texture pack, and then it should somehow get as close as possible to the PBR stuff or something, idk
