Verduras en Vinagre - Spicy Mexican Carrots, Cauliflower, & Jalapenos

- My version of those spicy pickled carrots, cauliflower, and jalapenos found on the table at any quality taco joint. My husband likes small potatoes added to the mix for a really awesome variation. Great as a condiment or snack and also makes a great dish to pass when you're asked to bring something!
2 lb. carrots
2 medium white onions
1 head cauliflower
1/2 bag tiny potatoes
10 jalapenos
1 tbsp. Mexican oregano
1/2 tbsp. peppercorns
10 allspice berries
9 bay leaves
6 cups distilled white vinegar
5 cups water
2 tbsp. salt
2 tbsp. sugar
Two garlic bulbs 🧄 🧄
In addition to the 2 heads of Garlic, 2 to 3 Tbsp Olive Oil to saute the onions and garlic were omitted from posted recipe. Thanks

I grew up eating this in Southern California but couldn't find it here in Idaho. I just made this and it's exactly how I remember it. Perfect!!!

Sorry to be off topic but it's bad here in SoCal and in California in general.
Something diabolical is about to take place here.
Bankrupt California is going to start hunting down children in its attempt to bring federal money into the state.
Pelosi's nephew just signed the bill SB1419 which will prohibit parents from having access to their children's medical records ages 12 and up starting January 1st, 2024.
AB665 (or as people call it 666) will allow children to be removed from their parents and placed in a group home without court order.
As of now county's health department sending out pamphlets directly to minor's attention with the list of medical services available to them free of charge anything ranging from genger affirming surgeries to psycotropic drugs.
The low income family's medical expenses are covered 💯 by the Federal funding in CA. The quality of care is 👎👎👎 as only low grade doctors accept MediCal but none the less the lump sum 💰💰💰 that the State receives on behalf of the needy is what they are after. So pretty much CA uses its poor to get rich.
And this is taking place in the State that is responsible for 20,000 forced sterilizations performed in 1930's which served as a blueprint for inhumane policies that were implemented in Germany in 1940s.
History is about to repeat in California.

Here in Spain I can't really find white vinegar so I'll see how it goes with a combination of white wine vinegar and apple cider vinegar 🤞 I also don't have any allspice on hand but like you said it's an acquired taste so I don't think I'll miss it. People don't really like spicy food here but I hope it'll be a success! At least for the people who gave me their pepper harvest 😂

I haven't tried it but I'm sure you could. It might be a little more acidic... but I wouldn't hate that. I love bitter/acid taste. Plus ACV with the mother is super healthy.

Thanks for the recipe! Great results, but I had to put already 6 (or is it 8 already?) full tablespoons of salt and double the sugar, and it is still not tasting quite as deliciously salty as the verduras en escabeche I tried in one award-winning taqueria in PV. Now that it's been 2 days after, trying it again. I think I will need to add those other 2 tbsp of salt, bringing the total count to 8 tbsp (or is it 10?). And I think next time I'll be skipping the sugar altogether, it's much tastier without it.
NOTE: I did add 3-4 more jalapeños and 3 more very large carrots (mine are gigantic, gotta use them up)

You could totally water bath can them. I'd probably just process the brine and raw veggies 45 or 50 min. Don't cook them first. Or do old school flip canning.
How long do they last?
I'd say 30 days. They're sitting in garlic and vinager so probably longer. But they'll be gone before 30 too lol
I have never seen garlic that big in stores here in central Texas.
Probably have access to better produce cuz the growing season is longer?
