Thank you for the compliment. I'm not sure that the brut de forge finish really poses a problem for cleaning. I'd be curious to see if anyone has done any experiments to show bacteria on a knife like this that remained after normal washing with soap and water. I have several brut de forge knives in my own kitchen that I've used for years. If it was a concern for you, you could submerge the blade in some kind of disinfectant bath, similar to how anything is hand washed in a commercial kitchen. Depending on the pH of the solution it could affect the patina on the high carbon steel. On a different note, the brut de forge finish actually helps prevent food from sticking to the blade when cutting. Thanks for watching. 🤙

If you're looking for a granite piece for a flat surface, I found a countertop store in my area that gives away the sink cutouts that are leftover. If not free, many will sell those at a greatly reduced price!😎
What press is that you are using? I want to get a press, but can't really find anything less than industrial (well, what I consider industrial) size that wouldn't fit in my basement. lol This one you have looks like exactly the size I am looking for. I have found manual ones in this size, but nothing that would operate like what you seem to have. Is yours a modified manual one?
I have the 12-ton press from Coal Iron Works. I think it's the best entry level press around. It's got a pretty small footprint, the weight is manageable to move if needed, it's got a surprising amount of pressing power for its size, and it's a great value for the price. I haven't modified mine at all.
Hey David…great knife set! I’m going to order a set of the diamond stones and wanted to see if you thought there was any reason to go lower than 300 grit for setting initial secondary bevels? It’s probably not necessary on culinary blades like these with almost full flat grinds..just wondering about thicker blades. Ultra sharp doesn’t make anything more coarse but DMT does have a 120 grit diamond stone. Just wanted your opinion on whether the lower grit stone was worth the extra $85 or if 300 sets bevels quick enough on thicker blades?
Hey, thanks for watching! I personally don't think there's much of a need to go more coarse than 300-grit. I've sharpened plenty of thicker knives like cleavers and bowies starting with the 300-grit stone just fine. You might save yourself a minute or two by starting with a 120-grit stone, so if that's worth the cost then I'd say go for it. If someone gave me a 120-grit stone I'd certainly use it, but I wouldn't buy one myself.
