- Hello its Bekah and welcome to a calming cook with me (Slow Living Homemaking) here at our little farmhouse cottage kitchen on the northern plains of Iowa. It's really nice to see you again and hoping all is well. For dinner tonight I’ll be making a cheesy summer casserole with squash thats from our garden along with a pan seared chicken and fresh steamed broccoli. Its been quite a busy day with last minute homeschool preparations and planning and I was able to get in our homeschool room early this morning and start getting it prepared for fall and the upcoming school year….so a little tired but I want to make sure to cook the summer squash so it doesn't go to waste. I wish my onions in my garden got that big. You can keep the onion top. Dehydrate or freeze dry them. Turn them into onion powder or cut them up really small, dehydrate them, and use them as a onion. Garnish. If you are growing garlic, do the same thing. Make your own blend of onion, garlic seasoning. My onions haven’t gotten that big yet this year but next year I’m hoping it does. I haven’t successfully growing garlic yet, but this year is going to be the year I successfully sold them and next year get a wonderful harvest. I’ve been watching you for a while now. I believe since your first video. Will you please do more garden videos. Will you show me the correct way to sell garlic and onion in the process it takes. I believe our weather is pretty much the same. I’m in Minnesota. I have her neck garlic, ready to be sewn now.

My mom used to make fried squash which was very good!
Flour salt pepper egg!’
Cut them in rounds and dip them in the flour mixture and fry.

🍁🧡🍁 Hello Bekah! 49 days until Autumn. This was such a relaxed and cozy episode. Your dinner looks so delicious and so beautifully plated. I do love squash and making a Mexican squash soup called Caldo de Calabecitas. Had a great harvest of jalapeno & serrano peppers, most of which I pickled. I am so excited for Autumn to arrive. What wonderful produce from your garden Bekah, your garden looks amazing, I believe you showed it in your last video. Watching you cook is a joy, you just calmly go about everything and then have a perfect meal for your family. I smiled when you put the remainder of your onion in a zip lock bag, I do the exact same thing. Looking forward to watching your Fall decorating, I'm ready for it. Hope you had a fun time when you were here in Tennessee. And on a side note, I don't know why watching you use all your pretty tea towels in all you do encourages me to go buy new ones 😊. I’m a little late to the party this week, just returned from up north as they say. Looking good kiddo! That dish looks wonderful. It can’t be time for you to start your homeschooling already?! Time is just flying by for sure. I love my Hisea boots and have been trying to grab a pair of the winter temperature hunting boots, but every time I go to order them they’re out of my size. Gonna have to be quicker I guess. Well I hope you didn’t get hit by the storms last night, looked like Southern Minnesota, Iowa and Wisconsin all got some bad weather. That all looks so yummy and the schoolroom looks so cozy and inviting. in LOVE with those nails, lol. Ready for the witching season for sure! I'm slowly decorating for fall this week. Have grandkids coming this week before school starts and hoping to involve them, at least in the Lemax Halloween village. Hi Bekah, wanted to let you know your videos are very soothing…thank you. Also, is your video you made a while back introducing your cats not on RUclips anymore? I was searching for it a few days ago and can’t find it
I just use the cheddar i hate sour cream. I make red skin potatoes like that cut in chuncks pre cook them till kind of tender ad garlic peprika, olive oil then cheddar and roast in the oven instead of air frey.

Just a question from someone who has love/hate relationship with chicken. Isn’t it easier to cook chicken if it’s thinner? Does it cook thru? I always burn my chicken from the fear of leaving it raw, as always love your videos.
