Thanks Ken I love cooking Greek food as I learned it from my Greek friends. I wish we had some of the things here like mizithra cheese or the phyllo dough but I make do. The Mexican friends love the different countries food I make. I personally love Greek. Thanks
Loved the recipe. This is what you call "Mediterranean" diet. (Tomato for your fruit, beef for your protein, onions for veggies and olive oil for your fat). The pasta doesn't count! I make it as well but add cinnamon and bay leaf if I have it at the time. You mentioned the smuggling of cheese. A few years ago, returning to Montreal from Greece, they asked if I brought back any food items. I told them no because someone told me I couldn't. Well , to my surprise, they told me I could bring cheese. In fact they even told me it's mucher cheaper there lol!! Check with customs, maybe you can bring more and freeze it.( I don't know about soft cheese)
I knew the food was going to be good when you grabbed that meat with your hand 🤗 I like your simpler spice mixture. I usually use middle eastern 7-spice mixture and it can feel (heavy), but yours looks just Perfect 😍😍😍😍
Ok.. so I just bought mizithra cheese from a Greek store near my city. It's a Huge ball! So what should I do with it? How do I use it, store it, save it, serve it? I'm keeping it in the fridge sealed until I find out the best way to use it. Thanks 😊
Now that’s fantastic Miriam!!!! You can easily freeze mizithra cheese, so I would divide it into smaller pieces, wrap them in cling wrap and put them in your freezer. Keep the piece you want to use in your fridge. Again, wrapped in cling wrap or some kind of airtight container. That’s it... enjoy!!!! 😂👍✌️💪🙌
Hi Ken! First off, thanks so much for this amazing recipe. I don't to Italian bolognaise sauce anymore as I much prefer this Greek version. One thing I struggle to get right is the salt and the pepper. Can you give me the amounts you've used in this recipe so that I can try that as a baseline? The salt and pepper are the only ingredients in the recipe that you haven't supplied amounts to, and I totally understand why. However, I'm an amateur cook and I've been getting it wrong. Thanks Ken!
Hey Ken, do you know of the origins/history of this sauce back in Greece? It's interesting how this is similar to "Greek Chili" that was used by Greek immigrants as toppings for chili dogs in the US and fat boy burgers in Canada.

I make my kima almost the same way. Along with the cloves, I’ll add a pinch of all spice, a couple bay leaves, and some thribi (from Kalimnos). 👍🏼

Thank you!!! 🙏🙏🙏 Salt is a very personal thing. I would keep it to about 1 to 1-1/2 tsps.
