There have been multiple times showed during demon slayer that giyuu cares about Shinobu, of course he didnt show it because he was distant. Shinobu has also cared about Giyuu, it was said in manga she attacked Nezuko because she was worried for Giyuu because she thought he was stubborn child. That's why she got so mad when Giyuu protected Nezuko. Gyomei also stated that they like to talk to eachother and that they dont mind the others presence. Shinobu tells Giyuu "isn't the moon pretty?" In japanese it means "I love you". (But it hasnt been confirmed.) When Shinobu talked to the spider sister, she added "tonight" Meaning last time she'll see it. Shinobu was the first one to see Giyuu smile when he ate salmon daikon. In hashira training arc, when Tanjiro knocks some sense into Giyuu about living and Sabito flashbacks, Giyuu asks where Shinobu is, probably wanting to talk to her after Tanjiro helped him. During that time Shinobu tells Kanao about her plan. Giyuu and Tanjiro arent aware because they were with eachother and Shinobu didnt want to tell Giyuu about her plan. The hashiras didnt know neither, aside Gyomei finding out later on. I'm pretty sure Ubuyashiki also knew. (Mentioned and added by data6310 in the comments!) I believe from the hashira meeting where Gyomei stopped Sanemi from causing ruckuss Shinobu and Giyuu didnt talk to eachother so they couldnt interact with eachother before the battle and Shinobu's death. Giyuu and Tanjiro are shocked when they hear that Shinobu has died because they didnt know about their plan. Giyuu lost another person who he thought he could protect and get thru the battle together with. After the battle Giyuu smiles more Rengoku and Shinobu wanted to achieve that. He also cuts his hair to let go of the past, so he can let go of his guilt that wasnt his fault.
Okay first of all Shinobu may have genuinely thought the moon is pretty and the phrase "isn't the moon lovely (not pretty)" means I love you, Shinobu said that to Tanjiro as well, Shinobu also never saw Giyu smile and Giyu only truly smiles around Tanjiro and at sanemi in the end, Giyu asked about Shinobu at the end of s4 ep2 not because he cares but because she was the only other hashira not taking part in the Hashira training, they probably had a whole nother conversation and just skipped to Shinobu's part. They are friends (even if she annoys him with her so called rude teasing) but they aren't and never will be a ship, I like their friendship though.

Shinobu and Giyuu actually have such a close relationship together. Giyuu cold hardly show his feelings tho. But it still brings mischief to Giyuu as alot of his comrades eventually die (Which was almost Tanjiro and he cried over that) and the guilt came back. "I'm always the one who is protected" After Tanjiro becomes human again, Giyu's life improves a LOT!
They really should give Giyu a better reaction than just a shocked expression while running because ship them or not, he did enjoyed talking to her. Also I was pretty disappointed when Shinobu (while getting flash backs) didn't remember Giyu at all because they were pretty good friends.
