Hi Nicole! You can make this up to three days in advance. Make sure you wrap it tightly so no ice forms on the cake. The cake can be left put of the freezer for about 30 minutes at room temperature. After that it will be completely melted and more like a cream on the soaked cookies. I hope you and Vini are doing great!

Uprated, yowza! Pastry is wonderful in France but the good stuff is VERY EXPENSIVE usually. I can't do the fancy stuff so leave that up to the pros, as needed for special events, but knowing how to make something at home is a fun, fun treat!

I want to make this for my coworker's retirement party, but I wanted to ask 2 things. First, how far ahead can I make this & keep it in the freezer? Second, for how long can this cake stay out for people to serve themselves? (The retirement party is a potluck.)

My dulce de leche mixture with the whip cream became very runny. Should it be cooled before adding it to the whip cream?
