My Pate Fermentee looks a little dry in some places. I measured the water correctly les the tablespoon but I did not weigh the flour. Maybe too much flour. Can I correct this somehow? Either way I am moving forward with the recipe as I do not want to waste the flour.

As I moved forward it seems I did not mix it entirely, and when I looked at it closely it look to have the same texture as shown in the video.
