    It's really simple and easy plus it's really delicious.
    It's a great side dish to fried shrimp or fried fish and a nice salad.

    CRAWFISH MAC & CHEESE
    INGREDIENTS LIST
    2 Cups small elbow macaroni
    1 Tbsp. Salt
    1 Egg beaten
    1 Rib Celery
    ½ Yellow Onion
    2 Tbsp. dried parsley
    4 Tbsp. Salted butter
    1 Cup whole milk
    1 Tbsp. Paul Prudhomme’s Seafood Magic
    ½ Tsp. Zatarain’s Shrimp and Crab boil
    8 oz. Velveeta Shreds
    1 ½ Cups grated cheddar cheese
    1 lb. Crawfish Tails / Reserve 20 for garnish
    ½ Sleeve Ritz crackers Crumbled
    PRE HEAT YOUR OVEN TO 350°F
    Boiling Macaroni
    Use the instructions on the bag or use mine.
    Add macaroni to boiling water. Add 1 Tbsp. Salt and stir.
    When water comes back to a boil, set timer for 8 minutes.
    Then remove pasta and strain water. Rinse with cold water and let drain.
    Add Pasta to a large bowl. Add dried parsley and stir.
    Now add 1 beaten egg and stir. Set macs aside.
    Making the Sauce
    Melt butter in a skillet. Add onions and celery and seafood seasoning. Sauté for several minutes. When you see the onions are browning, add the milk.
    When the milk comes back to a low boil, add all the cheese and stir until all cheeses are melted into the milk.
    Next, pour the sauce over the elbow macaroni and mix well. Use all the sauce.
    Next, mix in the remainder of the crawfish tails and mix them into the mac and cheese.
    Spoon the mac and cheese into a casserole or your favorite bakeware.
    Bake in a 350°F oven for 20-30 minutes or until the cheese sauce is bubbly.
