Heads up for the non cooks, the oil is essential here as it raises the smoking point of the butter. Without the oil that butter gonna smoke up the joint something fierce. I had such trouble with butter basting steaks in the past cause it would just turn into a smoke show. I never added the oil cause I figured there was no point since the steak will render fat anyways, but the oil is what makes it work.
Who ever edits these videos deserves TOP DOLLAR! lol they completely embody Matty’s personality

HP is honestly the best sauce ever! Been eating it every week of my life since I was knee high to a grasshopper and I always go back for more. I'm a sauce fiend and have tried everything I can get my hands on for more than 40 years. I've made my own sauces for about 25 years and only one home made sauce even compares to HP, chimichurri. Matty knows what he is talking about, cook that steak perfectly, get onion in there (absolutely with the steak juices) and get some HP on it, your taste buds will thank you literally every time!

I used to when I was a kid. Its actually delicious. But only because steak is always delicious. Plus my family always did them well done back then. Now I go sauceless besides the pan sauce. Dont want anything to take away from that sweet pink meat flavor.

I love that your showing people it's ok to cook a top sirloin as a steak and a rib eye as chicken fried steak. It is important to know how to treat different cuts but also that sometimes you can blur the lines

My alteration, (since everyone asked) 1 part tamarind paste, 1 part soy sauce, a sprinkle of fish sauce, five spice and black pepper.

Neither of that. I just don't like the concept of this new show, as to me it does not have the usual Matty Matheson charme. A weird look, Matty looks unhealthy and it all has kind of a corporate character because of the lack of swearing and craziness that is usually on display in Matty's videos which is part of the loveliness and realness that makes him so appealing in my opinion. And I am trying to show that by using my ability to vote.
However, I do not judge the people who like the new style, every Matty is better than no Matty. I just would have liked for the return to happen under different circumstances.

Turns our the names are all accurate but the product is still in design/production and not ready for release which is due to be a limited run by a design company Castor Design www.castordesign.ca whose current offerings include a $12,000 dinning room table, a $900 stool and, get this, a $150 door wedge...yes a stained and faux worn wooden door wedge for $150!!!
My guess is that he is targeting high end consumers with a limited run from a design firm to help deepen his brand and get him in further on his quest in life.
Let's see the price, but if the above are any indication, you're looking at a minimum of $500 for the pan, if not into the thousands.
Let's hope he can keep the price under a few hundred so the average cook who doesn't use it for a living can afford it as an heirloom investment.
he should rename this show "Got Beef: with Matty Matheson" because he makes a lot of beef and people get mad about it

I’ve had American/Australian/Japanese A5/Olive Wagyu, USDA Prime/Choice/ all kinds of cuts from Ribeye, Strip, Filet, Denver, Flank, Skirt, and at the end of the day, a nicely seasoned center cut sirloin seared on a flat top of cast iron is just delicious. There’s something about the texture and flavor consistency that makes it such a great eating experience. It will always be my favorite cut.
How do people rest steak for 20 minutes and its still hot? I rest mine for 10 minutes wrapped in foil, and i warm my plate and its still cold.
The thicker the steak the more heat itll retain, but ultimately a steak doesnt always have to be piping hot. A lukewarm or cold steak is still great, and ultimately if its going that cold then you can either warm it up gently in the oven (or even on top of those onions after you carve) or serve a piping hot sauce to go with it.
Your house is too cold harambe
Could sous vide a steak and not need to rest it, if very hot steak is your thing.
I only rest for 5 minutes. 20 is unnecessary. Don't listen to Matty. And while we're not listening to Matty, spring for a New York strip. Next step up in price and much less likely to make your jaw seize up while you're trying to chew.
