This film is so psychologically layered in its character representations. I think Sarah is the epitome of someone pushed over the edge---for the second act of the film, we can see that her hold on sanity is still tremulous; she's fighting an inner battle to cope with the sudden loss of her family. Relations between her and Juno are already strained due to Juno's apparently unexplained absence after the death of Sarah's husband and daughter, causing Sarah to think her friend abandoned her in time of need. When it all comes to a head (finding Beth mortally wounded, being forced to euthanize her, discovering her husband had been having an affair with a person she thought she could trust), Sarah's mind snaps and reforms her into a mechanism of vengeance. Her rage at her loss and Juno's duplicity overtakes her. That's why the original director's cut ending makes so much more sense, in my mind. We're looking at someone who has, finally, cracked---and she doesn't care.
