POTATO TAQUITOS
SERVES:8 as appetizer
INGREDIENTS
7-8 Flour Tortillas
FOR FILLING
2 Medium Size Russet Potatoes
( Approx 350 grams)
2 Big Garlic Cloves
Salt & Pepper to taste *
½ Tsp Kashmiri Chili powder- leveled .*
½ Tsp Garlic Powder
2 Tbsp Milk *
1 Tbsp Butter *
2 Tbsp Cotija Cheese *
1 to 2 Tbsp Cheddar Cheese/ Your favorite cheese*
FOR SERVING
Tomatillo Avacado Sauce/ Salsa
Mexican style Crema/ Sour Cream
Pickled Onions
Cotija Cheese
Chopped Cilantro.

TIPS/ NOTES
1)Start cooking the potatoes in cold water. This will ensure that potatoes cook evenly all the way through.
2) Please add less salt while cooking the potatoes.
Can adjust the salt, if necessary, after adding the cheese.
3 ) Use Kashmiri chili powder as per your heat tolerance.
4) Do not be tempted to add more
Milk, butter , or cheese. Otherwise
the mixture will come out while frying.
5) It is ok to skip milk & butter.
6)Drain the potatoes well and cook the potatoes until they lose excess moisture.
You don’t want loose or creamy potato filling otherwise it will come out while frying.
7)Allow the mixture to cool for 2 -3 minutes before adding the cheeses.
8)Parmesan cheese can be substituted for Cotija cheese.
9) Refrigerate the taquitos at least
1 Hour before frying.
10)Fry the taquitos in small batches, 15-20 seconds on each side, turning them as they cook, until they are golden brown and crispy on each side.
11)Place them on a plate lined with paper towel.
12) If using toothpicks, don’t forget to remove before.
13) Allow the taquitos to cool slightly before serving.
