His voice is definitely aged, but he's hitting all the notes. So it's bugging the crap out of me that he keeps dodging the microphone lol

It’s volume control. Common thing for singers to do. If they sing every line close to the mic, it would cause feedback.
I think it's just modulating volume and input to the mic. For an acoustic set no one is playing at full volume and the goal is to not overpower each other. The song is really belted out on the recording, so he turns his head or leans back to be louder but not be too loud. Clipping phrases off shorter could also be to help in this regard or it could just be to try something different. If you play the same song for 20 years i'm sure you get bored and want to change it up a little here and there. Also your voice changes as you get older. So that could be a factor.
I like the vibe but don't love the chord progression on the chorus
