@@HealthyAmbitions Cooooolll! I made it today, 120 degrees F and I substituted coconut sugar for swerve and melted butter for avocado oil...it did turn out nice and soft and it did rise a little bit, I think! This was the easiest keto bread with yeast recipe I've seen and it tastes great! Thanks.
Tried this recipe, and the fam really liked it! This recipe yields the closest texture/taste/smell to white wheat bread, IMO. We ate the loaf up before we could try it in sandwich form, but it makes a delish slice of toast~doesn't crisp up, but so good with a little butter! This recipe is a keeper.

So glad you enjoyed it!! Making bread that is not wheat-based can definitely be tricky, but it doesn't rise like wheat bread and tends to be a bit more dense.

I haven't tried that, but I doubt it. I did find (and this may sound weird), but cutting that lengthwise line down the middle before putting in the over seems to help the bread loaf rise more. Maybe it allows for more growth with the slit in it? I do plan to start experimenting with adding unflavored protein powder to see if that makes a difference. Gluten is a protein, so adding 1/4 cup of another type of protein might help. I haven't tested it yet though.
That's weird! I've never had mine cave in...Did you bake it for the full amount of time? It looks done way before it's actually done, so that can make it tempting to take it out of the oven early. Where any of your ingredients old or expired? Outside of cooking time and/or old ingredients, I can't imagine why it would have caved in...
