Occassionally, a vegetarian version with seasonal veggies in a tomato sauce based filling in a squared crepe pocket, crumbed and shallow fried till golden and served with Tabasco.
American here. The first pancake is almost always a throwaway (to the dogs in this house lol). And you want to cook them with butter, not olive oil. When they're done, top them with some butter and pure maple syrup and that's it. Add some crispy bacon on the side to dip in the syrup and it's like you've died and gone to heaven! 😇😇

I love pikelets the smaller pancakes here in Australia and I love fluffy style pancakes as well I love having maple syrup or golden syrup on my pancakes sometimes I have them with lemon and sugar -they would go well with a couli as well
Being American, I'm a bit partial to American style pancakes! My favorite way to prepare them is to make the pancakes just like you did but add some lemon zest and ricotta cheese to the batter and then top with a warm (or cold) blueberry compote. It's heaven in a bite!
These look absolutely delicious!! I recently went to Denny’s and tried their dulce de leche pancakes! They were topped with crunchy cinnamon crumb topping and they give you a little pot of dulce de leche to pour on yourself. They were magnificent!! I’m going to have to try this recipe with creme fraiche on top!! Xoxo
I am from South Africa and we call our pancakes flapjacks, not sure exactly why. However I have a perfected recipe to make these that require minimal effort and it comes out delicious. The one thing I wanted to add is for a first time pancake maker, is to look at the bubbles that form on top as a guide for when to flip them. As soon as the bubbles form on top and they start to pop, then you can flip them, but be careful if the pan is set to high it will burn before most of the bubbles are popped. Medium-low heat is the best option along with patience. Mostly I see people trying these pancakes using sweet ingredients, I on the other hand enjoy it with some butter, cheese and what we have here "biltong dust", which is like a fine dust made out of ground up beef jerky or biltong. It is delicious like that especially if you treat it like a scone, a much fluffier scone that is and use what you would top a scone with. And another thing I noticed is that many commented saying using butter, but my recipe actually includes sunflower oil in the batter, thus no need for butter or oil technically, however since I am afraid of my pancakes sticking to the pan I just spray a tiny bit of cooking spray and it does not effect the flavour at all. (American/Midwestern) former breakfast chef with a few comments about this recipe. My thoughts: 1) The batter is too thick it should be more liquid. 2) There is zero reason to whip the egg whites. Just put the whole eggs in the batter. This does nothing to improve the texture. The leavening agent, baking powder and sometimes a mix of baking powder and baking soda, will give you the lightness/airy-ness that an american pancake should have. 3) As many others have said, use butter to grease the griddle. It will improve the flavor of the pancake. A VERY small amount of a vegetable oil (I use canola oil) instead of butter should be used if you are more health-conscious. I couldn't discern what oil you were using but several commenters suggested that it's olive oil which would impart a flavor to the pancakes that in my opinion, should not be there. 4) Using a basic pancake recipe, you can add all kinds of things INTO the batter. My favorite is sliced bananas but there are many common 'additions' to the batter; blueberries, pecans (a nut that I bet is rare in the UK/EU), diced and rendered bacon (rasher in Brit-speak :), chocolate chips, diced apples with a dash of cinnamon. Other fruits like raspberries, blackberries, or strawberries would not be put into the batter but would top the pancakes. They don't cook well in the batter and give a slimy consistency. 5) TBH, the recipe is pretty bad. American pancakes must be made with buttermilk, not milk. I don't think I can post links in the comment but google 'IHOP buttermilk pancake recipe' and try one. 6) Pancakes should be served with butter and (ideally, warmed) REAL maple syrup. Creme fresh or whipped cream are occasionally used. 7) Your presentation was right on. In fact, you really excel in presentation in all your videos. Bravo! I hope you take my comments as constructive criticism and not negatively.

This recipe isn't consistent with what Oliver preaches healthy cooking should be, starting with his incorporating scrambled eggs (doesn't matter how you handle them) inside the pancakes batter. All the fluffiness comes from the leavening. An identical result can be had by combining the ingredients without the eggs, and mixing beaten eggs into the thinner mixture or by eliminating the eggs entirely adding a small amount of sugar and arrowroot or cornstarch, and adjusting the amount of milk. Pancakes, regardless of thickness, as a delivery mechanism for desert cheese, jam, fruit, syrup, sour cream, whipped cream and/or butter might make a good desert, but is an absurd idea for an entree. Making them fluffy doesn't reduce the carb content, it makes it easier to eat more before feeling full and faster to metabolize. So rather than a breakfast to carry you through to lunch you get a large carb load with the excess converted to body fat, a mid-morning blood sugar crash and an urge to eat a large sugary mid-morning snack with tea or coffee.. The stack should he shortened by half and protein and fat added beyond that of the eggs and creme fresh to make this a balanced breakfast. The pancakes I prefer are savory and don't require toppings of any kind. They are thick, moist, flavorful and used as the carb component of a balanced meal which could be breakfast, lunch or dinner with a minor change in spices or seasoning.. Hints: Whisking from side to side been demonstrated to be more energy efficient and effective at blending and incorporating air than lifting in circles or ovals with eggs or cream. A large deep measuring cup with a handle is better for hand mixing and whisking than a bowl.
Your recipe is not the traditional so American pancake, for which the whites are not beaten. The dry ingredients are mixed, the set mixed separately, then dumped into the dry and stirred until the dry are all incorporated, leaving the batter somewhat lumpy. My American mother made them several times a week for 70 years, using a recipe fcom the iconic Betty Crocker Cookbook. Jamie loves to complicate things.
The folding in of the whipped whites is something you'll never see done at a diner or IHOP type place. It appears Jamie Oliver knows as much about American pancakes as he does burgers (on one of his shows he created some burger/meatloaf Frankenstein monstrosity and called it American). She should try some buckwheat pancakes or silver dollar sour cream pancakes.
+mama bear yes they are American style. If you travel from one state to another the recipe for how something is made will differ drastically so there is no one set way to do something here. Ask someone how they make meatloaf then ask someone from five other states and I am willing to bet that you will get five different recipes.

The dry ingredients are mixed, the set mixed separately, then dumped into the dry and stirred until the dry are all incorporated, leaving the batter somewhat lumpy. My American mother made them several times a week for 70 years, using a recipe fcom the iconic Betty Crocker Cookbook. Jamie loves to complicate things.

The folding in of the whipped whites is something you'll never see done at a diner or IHOP type place. It appears Jamie Oliver knows as much about American pancakes as he does burgers (on one of his shows he created some burger/meatloaf Frankenstein monstrosity and called it American). She should try some buckwheat pancakes or silver dollar sour cream pancakes.

+mama bear yes they are American style. If you travel from one state to another the recipe for how something is made will differ drastically so there is no one set way to do something here. Ask someone how they make meatloaf then ask someone from five other states and I am willing to bet that you will get five different recipes.
