Steak with Chimichurri 🥩

  • Ingredients
    1 bunch flat leaf parsley, finely chopped
    1/4 bunch fresh oregano, finely chopped
    4 cloves garlic, smashed into a puree
    100ml red wine vinegar
    200ml extra virgin olive oil
    1/2 tbsp chili flakes
    Salt and pepper to taste
    Method
    1. Mix everything in a bowl and enjoy!
    Makes a great marinade for any meat as well as a condiment! Keeps in an airtight container for up to 1 week in the fridge.

    I can't believe my eyes. An actual PERFECT chimichurri, using wine vinegar is VERY traditional (I'm a big fan of the taste apple cider vinegar gives it though), all fresh ingredients, impeccable! Sadly this is a dressing that gets better the more you let it rest (ideally overnight) so that the oil/vinegar mixture gets properly infused with the taste of garlic and spices...but still! I'm amazed whenever someone who's not from here gets it SO right!!
    You got my Argentinean seal of approval!!!

      @@trollolol705onion in a chimmichuri? its equal parts parsley + olice oil, garlic/chili to taste, and red wine vinegar to cut through the oil + some dried oregano!, that sounds mor like a delicious salsa to me!

      Parsley, garlic, any neutral oil and apple cider/red wine vinegar. Black pepper and salt to taste. If you want you can add dried oregano/tyhme also.@@baptistemilletpetit1957

      Someone explain this “chef” that you can’t make chimichurri with olive oil. As a chef he should that. Olive oil overpowers every other ingredient.

      @@Ktracho1988 not true at all. The olive oil is cut with the vinegar to balance it out, along with the other ingredients. There are different types of olive oil. You should know that.

      This is how chimichurri is done in Argentina. Not sure if American chimichurri is made with olive oil, fresh chilies and fresh oregano.

    😋 chimichuri must be made the day before to get full taste also about triple the amount of parsley, ate this in Argentina many times and the way they cook beef over fire is so skillfull , I would give anything for that beef again

      giving the sauce time to meld sure, but he made a very small amount, adding more parsley wasn’t really going to do much since it was proportionally the bulk to begin with. you’re need to add more oil if you did as chimichuri shouldn’t really have a thick pesto like consistency. it tends to be relatively loose, as it is here.
      the consistency is also preference, in Argentina along with other nations and cultures you’ll see it thinner and oilier or slightly thicker. you can also find it in green and red variants.

    Here in argentine tend to make spicier and less herby. We use a lot of dry chili with and without seeds and rehydrate it with hot vinegar and water so it feels more stationed or aged, kind of like instant pickled onions. With time it gets even better.

    Hey Chef, this is an awesome chimichurri. I also recommend you check out the Chilean variation(s), which use lemon juice instead of red wine vinegar, use nuts as well, and are blended or crushed, ending up with a more pesto-like texture.
