35 % pork shoulder (350g)
35 % lean beef (350g)
30 % pork belly (300g)
SPICES PER KG OF MEAT
19.5 g Salt
2.5 g Cure #1
2 g sugar
2 g white pepper
1,5 g caraway seeds
1,5 g mustard seeds

The best landjäger I’ve tasted was from a place in Connecticut called Noacks. Perfect dryness, soft texture, and just the right amount of cold smoke.

Youvare my favorite sausage guy Dan!! I love your no BS, simple approach to old school sausages without a lot of starters, fermenting etc. I just dried some basic polish swojska after cold smoking and it was amazing.

How long did you dry them out? It seems according to the video you are them immediately after the cold smoke of a couple days?

Hello, I love your recipes! Quick question... is 1,5g (caraway seeds) the same as the US way of saying 1.5g (period instead of comma)? Confused because you used a period in the salt and cure amounts instead of a comma.
