    Definitely skin on.But I use indirect at 300 for 20 minutes with apple chips, hickory/oak charcoal. Oil both sides, season with sea salt and black pepper. With Salmon ? always simpler is better, don’t overwhelm with heavy rubs.
    Oil the grate before the temp gets to 300, then again, before you put salmon on .
    Skin side down, do not flip.
    Perfect served with lemon wedges and I serve a layered sautéed zucchini , squash and onion dish covered with Swiss or jarslberg cheese.
    Oh, and a nice rivers Marie Chardonnay.
    Delish!!!!!!

      Hi Ed, I don't prefer the taste of the skin and the fat in between the skin and salmon. I know this is a very controversial topic, but the best part is... this recipe can be adjusted for everyone to use. Team Skin on or Team Skin off. Happy Cooking, Chef Jason
