Looks like a wonderful restoration. While watching I was picturing the cowled monks tending the herbs.

The gardens are beautiful, but the Abby is outstanding. Would love to have seen more of the Abby. I enjoyed it. Thanks for sharing.

I think I was pushing the boundaries of my horticultural channel already by showing the abbey clips. But it was impressive.

OMG, I grow herbs, and have 60+rare tropical fruit trees in my back 40. I love peering into the garden of others, and this was
fantastic. Lived in France for 1 year and hit all the Gothic churches ( I was an art history major at the time ) but miss this Roman one. When it gets safer to travel there, I will resume my garden trips.
In the south of France , in a little village called La Napoule, there is a castle with a 7th c Saracen tower, and a great garden , for your next
foray into La Belle France, also a village carved into the mountain of the Masstif called Eze..
    Wonderful video

Historically, part of the reason for monetary gardens was to prevent the local villagers from heading to the local Wise Woman or Cunning Man who still revered the Old Gods. So, it was an act of religious deterrence since most medieval monasteries were originally within the walls of the local king's castle, if he was wealthy enough. It was a wretched attempt at Christianizing the local population; though when the Church failed, they resorted to conversion by torture, murder, and they even weaponized starvation since Christianity at that time was very much a religion of the elite since new converts were literally paid off with money from the Church!
