I mean... I don't understand the confusion. Rather than the uniform texture of eggs, cabbage adds some crunch to it to break the monotony. It's also a healthy addition to offset the obvious fattiness of the dish. And lastly, it's a relatively easy and affordable ingredient that is easy to prep. If it consistently pairs well with eggs, then why not add them? smh
I only ask because it's not something that is commonly done here in the U.S. where I am from (as far as I know), so it just seems very different to me to be frying your eggs into patties mixed with cabbage. Also, it wasn't meant to be a question out of annoyance, only out of curiosity. No need to shake your head at anyone.
I guess the Koreans have to have some form of vegetables in everything they eat. Also a lot of sauce. And whatever type of dish they come up with. The vegetables, primarily cabbage, keep it a bit "Korean".
I think in addition to it just tasting good it helps stretch the eggs further. Meaning using less eggs per sandwich while still filling you up and being more cost effective.

I hate floss meat so in the end no thanks for me way to much sauce
