When I was a kid, I stuck my head out the car window after my mom told us not to, and she rolled up the window. (We had just parked at the park.) My throat/windpipe was getting crushed and I couldn't move or say anything and the only reason she realized as quickly as she did, was because my throat suddenly made a high pitch squeal, which my mom thankfully heard. That 15-20 seconds of my neck/throat getting crushed while I was desperately trying to push back down the window to have it continue crushing my throat, is without a doubt the most scared I've been in my entire life.
That happened to me too. I was in the back seat, and we came up to a toll booth. My dad stopped a little too far forward, so he gave me the coins to toss in the basket. I leaned my body out to toss them, and he started rolling the window up while I was leaving back in. He closed the window on my neck, and I started choking. I blindly started smacking at his head until he rolled the window back down.

It's quite realistic. Sitting in stationary traffic on a UK motorway. Two cars ahead of me was a cabrio, top down as it was a *boiling* hot day in June, 2003. We're in the middle lane. Just ahead and to their left was an articulated lorry. Traffic in lane three, just stationary cars. It's common in the UK for motorcyclists to filter. It's a good idea to keep your speed down when filtering. A motorcycle rider was splitting between lanes one and two, riding too fast. As he got to the rear wheels of the tractor unit of the artic, the driver flung the door open. The rider's head was whisked clean off, landing in the cabrio. The torso pumped its blood furiously onto the tarmac. Quite the gore-fountain for a second or so. The motorcycle hit a few other cars and came to a stop. As the rider went under the door, the lorry driver fell from his cab. A hornet or large wasp had got in and it had already stung him. In panic, he flung the door open to escape, falling out in a heap, then he realised what had happened. The coroner determined the rider was travelling at 30MP/H. Thrilling for the rider, while it lasted, no doubt. The lorry driver wasn't lying about being stung. By the time emergency services reached the scene, his head was larger than a pumpkin, so swollen, his eyes were almost closed. The driver of the cabrio and the pair in the car ahead of me were in deep, deep shock. I didn't feel too good myself, but I kept my head while they did their job. At the inquest, the rider was found the be partly at fault for his speed, and the driver for opening the door so fast without checking, but was exonerated due to circumstances surrounding the incident, ie, being stung in the face by a hornet or wasp and still being harassed by it. No charges were filed.

Not sure where in the world you are, but tractor/truck part of an articulated wagon/tractor+trailer combo. In the UK, the door lower edge at the region toward the rear of the door, where the door is shaped to clear the front wheel, is quite high off the ground. The rider's head would have impacted with the lower edge of the door, while the torso carries on regardless. Think about the 12ft bridge videos and what happens to the tops of vehicles too tall to pass under. Replace truck roof with squishy meatsack. Similar thing Object too tall to pass safely under, object rather less 'resistant' and thus yields, in this case, in a spurty, squishy manner. If you're not from the UK, have a look at some lorry cab pictures and you'll see how high the door lower edge is toward the rear of the door. Bear in mind that if you're filtering/lane splitting, you'll be at least 2ft away from the side of the vehicle, ie, right in line to demonstrate what happens when a rapid meatball in a glass fibre bowl, sat atop a weak support ( the neck. It's rubbish in extension ) collides with an effectively immovable barrier at ~30 miles per hour.
Tragically drunk people do end this way. When I was a kid, another kid (drunk) was smashing mail boxes. Unfortunately the driver came in too close, too fast, and the kids head was taken clean off, along with his right arm and shoulder, it was a total mess and the other kids in the car were pretty much traumatized for life.

There were huge differences, from like not even deformed to down right squeezed pillows. I think they tested something like 8-10 or more different brands/models.
I love the test I do think what you could do is drive by and see how much damage a car mirror at like 60 or 70 would do to someone and then have that be basically the object hitting you while you stick your head out the window
A couple of months ago 2 people were riding a bike crossing customs in the frontier of my country and didn't see a chain on the road that was blocking the path (it was painted and there were signs), it was at like knee level and both of them got their heads cut clean, this test remainded me of that (i saw the uncensored images) You can look it up as Motociclistas decapitados en aduana Ciudad del este

That slow-mo was WAY more brutal than I was expecting!! I was NOT expecting it to go that far back into the mouth and absolutely destroy the jaw like that. That injury alone I doubt you're surviving. Not with all the massive bleeding that would take place going right down your throat and likely into your lungs. Plus it went back far enough that I wouldn't be surprised if it severely injured the major arteries and veins that travel through your neck.
Insects can take out your eyes if you hit them fast enough. The face shield on my motorcycle helmet saved my eyes hundreds of times over the years. When you hit a cicada you hear & feel a pop & it startles you. My dogs only got open windows in the neighborhood or school zones. 20 mph. Any faster & I close them.
During the post WWII occupation of Germany, some former German soldiers dabbled a bit in terrorism. One trick was to stretch a wire across the road at the throat height of a jeep driver. It worked often enough that the army starting putting vertical bars welded onto the some of the jeeps to make them safe to drive at night. The wires apparently did a very efficient job of taking off the drivers head. Or maybe the passenger, or maybe both.
True story: A good friend of mine was drinking & driving when his girlfriend decided to stand up out of the T-tops. He hit a tree at 60-70mph & cut her in half….late 80s high school we lost 8 out of my graduating class from drinking & driving.
I was always uncomfortable with sticking my arm out the windshield because I was afraid my hand would hit a sign or another car or something. Now I will never stick my body out of the car while it's moving if my life depends on it. Unless it will make for a cool slow motion video (I'm kidding).
You should try the same sort of decapitation video, but try it with different gagues of wire instead of a pole, maybe at different speeds, too. There are stories of this sort of thing going down IRL. I'd guess that thin piano wire would slice through extremely cleanly and have some pretty cool slowmo footage and a lovely, gory aftermath.

A metal beam on the bottom of the ski lift (which was slow compared to a car) then plowed through the top of my head and it hurt baad, even with a good helmet. I was pretty dizzy after that, but luckily the helmet prevented anything like a concussion. I'd imagine going straight into a beam that fast would easily decapitate you.

theres actually a video, of a woman completely naked from the neck to waist, and she sticks her head/torso out the car (obviously drunk), and the person recording (most likely the driver), captures the footage of her getting demolished by a sign due to them speeding and her recklessly putting almost her entire body out the window. Very unfortunate.
