To everyone asking, its integral to use flour that will produce long gluten strands. Aka bread flower. This will ensure your noodles dont fall apart. Please use the right flour. Things like cake flour or regular flower will produce gluten that is too short for a good strong noodle.
Yup. Strong white bread flour. It says on the packet 'strong flour ' . For wholemeal noodles 2 parts strong white flour, 1 part wholemeal flour. Or. Stick with strong white flour.
I made this recipe today using powdered egg, it came out great. The noodles brown nicely in butter, much different than store-bought pasta and worth the effort. I've made simpler recipes with much less waiting and they also come out edible.
I watched Korean reality show 'Law of the Jungle', the chef really did the noodle like this. Only use 2 ingredients, flour & egg. It works! And they said its delicious.. Really want to try this later 😋

Sorry to hear that you’re having troubles with the recipe. I really recommend you to use a scale for this recipe to get the precise weight of the flour as cup measurement can result in different flour weight depending on what method you use. Hope it helps.

You boil them between 2-4 minutes in water, rinse them in cold water to stop the cooking process, then take out wok mix your sauce until it caramelize and then turn off the heat and turn in the noodles carefully, if you make chow mein you keep the heat on and stir fry it .
5 minutes on medium fire boiling water should suffice. You can eat a little bit to try and see if they're cooked. You know they're cooked if you can bite through the noodle effortlessly and doesn't taste raw.

I’d not recommend it if you want that chewy texture. All purpose flour is with low protein and water absorption is also different.

Anykhways I’m making it with organic wholemeal bread flour. I’m on my second half an hour waiting.
I made them with chicken noodle soup. I must admit although flavour was good, rolling the dough was quite strenuous.
