  • Cooking a brisket on the Kamado Joe II using the hot and fast method. This brisket was approx. 15 lbs before trim work. We cooked at 325 degrees and it was ready in 5.5 hrs.

      Been busy with work and storm cleanup. I use Corel Video Studio for the edits and Sonicfire Pro6 for music editing

    Hi im knew to kamado joe smoking, Do I need to do a pre prep burn, before cooking in my kamado joe classic,

      What I would suggest is cooking a pork butt in it to start. A pit will get seasoned with animal fats not the smoke itself. Get you a fire going up to about 250 and not over 275. Slow cook a pork butt and your pit will be good to go. Cook the pork king and slow to an internal temperature of 203 and you will have a great first meal off the pit

    Also the fat can be a HUGE fire trap!
