I love that you put mushrooms, bamboo and quail eggs plus cabbage as one of the veggies. It reminds me of my mom's version because lots of people use green salad instead of cabbage now and they don't use mushrooms either it seems. Thanks for sharing!

How do u make the liquid thick with just one coconut? When I make this dish my husband always add more 2 to 3 cans of coconut. The finish look is so tasty. When I used the curry from the store alone it doesn’t give that red color; I have to add crab/shrimp mince to get the red liquid.
Man everyone's wrong. The red color is because you need some oil with the curry paste so that the oil floats to the top and is red bc it fried in the red curry paste. The reason hers is like that is bc she let the coconut milk (very fatty) cook down with the curry paste and thus the coconut oils took on that red coloring before she added it to the soup. Fry your red curry paste in some oil before you add it into the broth or do it like her where you let it cook into the coconut oils before adding to the broth.
Garlic and sugar, Galanga root, shrimp paste, coconut milk, bamboo shoots, quail eggs, mushroom, curry paste, chicken flavoring powder, salt, fish sauce, chicken, Vietnamese meatloaf. Veggies/herbs: cabbage, banana blossom, mint, cilantro, green onions. I can't see if she has thai basil, but you can add it too.

You can use paprika for the red color also.
Use the Korean pepper powder to get a bright red color.
