I’ve got the same hull and just finishing off a full custom rebuild. Massive job. Mines a converted 203l so had the benefit of glass stringers. Good luck with the rest of the build.
Laminating resin is supposed to remain tacky for three or four days which gives you a window in which to add more glass without sanding. The waxed or finish resin is only for the final coat. When it cures hard it has to be sanded for additional coats and wiped with Acetone to get rid of all the wax'. You can get sanding discs down to 1" (dremel)) and drums as well as two inch for use in the die grinder or in an electric drill that will give you a variety of contour sizes. You can also get carbide discs (look like silver metal with occasional carbide flakes imbedded in the metal. Cuts down fast when grinding and does not clog near as readily.
Try using a piece of pvc pipe with some sand paper for the internal radius curves on the chines mate. There will be a diameter pipe that will match the curve. It makes it easy and if you make it a bit longer than you need it will help keep curve more uniform

I know what you mean hard to keep at it. I’m doing a full restoration on a cobia takes ages but it all happens at once
What were the 3M discs you are using??????
I think they were 36 grit from memory.
