I used crunchy peanut butter instead because I didn’t have creamy, but they still turned out absolutely delicious. Thanks for the recipe.

Another for all people who need a microwave recipe :)
17g butter
3 tsp brown sugar
1.5 tbsp self raising flour
0.5 tsp milk
Mix brown sugar and butter until almost smooth but gritty with brown sugar, mix with flour and add milk half way through until flour becomes dough. Mix with milk. Microwave for 1-2 minutes on high or until fluffy and place in fridge for 30 seconds, take out and wait for it to cool. Enjoy your 7 minute cookie!

Thank you for this recipe, I just made it and they're so yum BUT I only used half the quantity of sugar bcz it seemed too much, and the cookies turned out sweet just with this much, so I'm glad i didn't use the same measure as yours for sugar

Going to try this with coconut sugar, low glycemic that want spike blood sugar.
Being an insulin dependent diabetic I still experience A spike with coconut sugar . It still has 4 carbs per teaspoon that I need to account for. You are lucky if you don’t get a rise in blood sugar.

I grew up baking those cookies! They were the inspo for this recipe - I cant get Hersheys kisses easily in the UK so I just used squares from a milk chocolate bar haha. Not the same but still tasty!

@IzyHossack - use dark chocolate in place of milk chocolate to cut the sweetness. It will balance out better with brown sugar.

You may substitute Stevia for sugar if you’re trying to keep your sugar intake low. These bake fine with granules of Stevia and a pinch of salt. 🙋🏻♀️💞

I usually use white sugar. How is the brown sugar peanut butter cookies compared to White? I may want to try that but I want to know what it's like.. lol
the brown sugar just adds a bit more of a caramelised flavour. White sugar would work perfectly well in these cookies if that's what you prefer though!

Yess these are based on those hersheys kiss blossom cookies! Sadly I can't get Hershey's kisses easily in the UK, so I used a milk chocolate bar instead :)

You honestly don’t need any extra ingredients, I promise it works with just the pb, sugar & eggs. Think of the PB as being similar to almond flour (I.e. ground almonds) which you can use as a flour replacement in baking. Almond flour is just less blended almond butter! So the peanut butter here is replacing the need for fat (eg dairy butter) as well as wheat flour. Give it a try as is! I promise you’ll enjoy them ☺️

Hello Hossack, do you have a idea how much to adjust the amount of sugar, if i use pure peanut butter without any additives?
You shouldn’t need to change anything about the recipe if you use a natural peanut butter! Just make sure you stir the peanut butter really well before measuring it out :)

Could you use egg substitutes for this recipe?
It could work! Try replacing the eggs with 2 tbsp ground flaxseed + 90ml (6 tbsp) warm water and mix 1/2 tsp baking soda into the dough too.

Most packages have grams next to the typical measurements on their serving sizes. I usually look at those and do some math/estimate how much to use.

Yes you can definitely do all white sugar or a mix of white and jaggery. The brown sugar just gives the cookies a more caramelised flavour but the jaggery will acheive that too :)

No one uses sugar anymore. Alternate broen sugar substitute bakes the same.
How much Swerve brown sugar would I need to use?
I haven't tried that so I can't be sure! However, I'd go by the suggestion on the Swerve packet for how to use it to replace sugar.

@@frankinsaneandmyrrh1202 I've not tried it myself! I would assume it'd be fine to do that - I'd recommend trying a lower temp than the bake temp (maybe try 140C?) for just a few minutes so that the chocolate doesn't burn :)

Nope! The peanut butter acts a bit like flour for these cookies giving them structure (a bit like how you can make flourless cookies by using ground almonds)

I haven't tried any egg substitutes for this recipe. You might be able to use a shop-bought egg substitute powder? But don't know what will work 100%, sorry!

Would you not use any baking powder?
For these cookies you don't need baking powder! The eggs give them a bit of rise but they are fudgy by nature

I haven't tried it so I don't know what might work. You could try using mashed banana + flaxseed or ground psyllium husk but not sure how well that would hold together really. Because the ingreds are so minimal in this recipe, the egg is pretty vital to it working imo

They are rich cookies so I find I only like to eat one each time! However you can cut the sugar down by 1/3 to 1/2 if you prefer
What kind of salt and chocolate
I like flaky salt (I use the brand Maldon) . The chocolate I used here was Galaxy but you could use a square of your favourite chocolate
I won't knock this but I feel like I'm the only one who doesn't like sea salt / flake-y salt sprinkled on top of cookies.

@@fabssss7868 that's because it's not. It's about 1+2/3 cups. You would be 5g short with those exact measurements. With baking it's incredibly important to have a kitchen scale because depending on how you measure will make the recipe very different in some circumstances.
Just buy a cheap kitchen scale and then you can always measure in grams. It's so much more accurate, and also saves you from a bunch of measuring cup dishes when you're baking.
