I really like this concept of the customer picking their seafood and having a separate restaurant to cook it. The restaurant does not need to keep inventory and the customer has a larger selection of seafood.
I'm Taiwanese . In some businesses at certain tourist fishing ports in Taiwan, the seafood they cook for you might not be the same seafood you selected. They may switch it.

About the European lobster : the texture is definitely due to the lack of freshness. You should avoid such « exported » purchases. They’re never good. If you do want to remediate to that, you ought to travel to the initial source of the product. It will definitely be worth it !
