Shui Xian has to be my favourite type of tea. Rock tea in general is but specially shui xian. It has that beautiful silky water-like texture/Mouthfeel. Then combined with the beautiful minerality and light floral. Can't be beat!
Your shops Lao Cong Shui Xian is impossibly delicious 🤤

I couldn't have said it better myself. It's Phil's fave tea too! 🍵❤️🍵

It took me forever to stop overbrewing early steepings!
It was just so counterintuitive to me at the time.

Great new video! I recently tried to buy some tea from your online shop but the site was not working. Several images weren't loading and when I tried to check out I couldn't! Hoping it will be fixed soon and looking forward to ordering some teas to try!

Is it better to leave the lid on the top of the gaiwan between brewings? I heard that its better to leave the top off when its not brewing to maintain more flavours and to have more brewings.

Love these brewing videos! I was surprised that rock teas often come in big 10 grams packs and always brew half a bag at a time yet still find the first few brews bitter. Will try the full cup flash brews! Question, do you re-boil water before each brew or boil just at the beginning? Assuming time between brews isn't very long.

Great question! We don't reboil for each infusion, but we do reboil periodically as necessary. Stay tuned for a video that will cover the details! Let us know how the flash infusions work out. ❤️😃

    Very nice video! I’m
Getting my first gaiwan soon, and I have some really nice rock tea . (Was briefly using my unglazed Japanese kyusu , but I no longer want to contaminate it with different non greens )
How long do you like to brew rock tea with boil water ?
    How about something like TGY?

Oooo. New Gaiwan sounds so fun! You can check out these videos for more precise timings, but intuitive brewing is the goal.
