    Love Celebrate Sausage, thanks for putting it together! I bought a Jende lapping plate two years ago and it made a night and day difference in my sausage game. A sharp knife and plate make all the difference. If I get picked at random, please pick another.

    I have not sharpened my blades since my husband passed he had them sharpened by a friend. I did not realize we should have sharpened the plates as well! I am learning so much watching your show, thank you!

    I am loving the use of the Barley in the sausage. Many sausage recipes can trace roots back to food preservation and utilization of 'lesser' cuts so that nothing went to waste. The addition of a grain, in this case Barley, is a great way to stretch the food that was available a little further for not a lot of extra expense. It also results in a spectacular flavor. Great recipe I'm looking forward to trying. Thanks for working with your sponsors to come up with some great give-a-ways. Sharp knives and plates are very important.

    Hi Eric!! October already? My the year has flown by and time for my favorite month,sausage month!!
    Today’s sausage is somewhat similar to a family recipe from North Dakota with German roots. We make a beef barley fresh sausage that is perfect for all three daily meals. As with most farm/ranch sausage recipes it is very basic made with what was on hand or raised on site. October and November were always busy months for us butchering and sausage making. Very fond memories and I still carry on the tradition today. I’ll be making a 5lb batch for my mom and dad (in their 80’s) to take to them soon.
    It would be nice to see more of these recipes as they are great for beginners as well as being supper tasty!!!
    Thank you for your dedication in making these videos! Am looking forward to the rest of the month as it also expands my personal sausage recipe binder. That will eventually get copied and past down to my kids as well as my nephews.

    We are a Swedish family and I usually make the traditional potato sausage for family Christmas. After watching this I may have to try this recipe for this years gathering. Thanks for sharing!     Hi Eric, Although I will probably never make this sausage, I enjoyed watching it. I am a retired butcher and have a couple of grinders along with dozens of butcher knives. I currently use a stone to sharpen all my equipment. I'd like to give the Jende Lapping Plate a try. Thanks...Miss Jamie

    The Jenna sharpener would be amazing! I purchased the sausage maker sharpening system based off your recommendation a year ago, but wanted to go this direction and didn’t. I think it would provide a superior sharpening system for my blades when cutting sausage. In my opinion, sharper blades equals cooler sausage with less heat. This one would be a winner I believe. Granted anyone that is fortunate enough will be happy and probably feel the same. As always love the videos thank you for everything you do. This is where I learned the basics of making sausage and now love doing it almost monthly. Depending upon the room in my freezer. 😂

    We are a hunting family who prefers to process our own meat. Got a #32 grinder a few years back but could really use a good kit to keep things sharp and at optimal levels

    Dull equipment is no longer a tool, it’s just a pice of metal.
    I try to keep things sharp with what tools I have at home but I can’t be as precise as I would like.

    I love to make sausage and since I've been watching your channel I have learned a lot about making sausage along with other things to make great sausage and how to keep food safe in the process. I have been making a lot of sausage and selling in city fairs, just sausage and have been selling out.
    i want to continue on this journey but would also like to keep my knives sharp and stop going and buying new ones all the time. This would save me some money and time.

    I am new to sausage making so the sharpening kit would be awesome. Not gonna upgrade grinder this year but I would love to give my old grinder to a family member and sharpening the plates and knife would be a nice thing to do. Also excited because it will help me sharpen my knovew in the kitchen.

    I have been bitten hard by the sausage making bug. My plates and knife are already dull but I can find a perfectly flat surface to sharpen them on. The lapping plate sounds perfect!

    Yes sign me up for the sharpener kit, that is one tool I don't have and have been thinking I needed to add that to my sausage making tool box. Another great video.     Another great video. I have never sharpened my plates. I have ground just about every type of meat that you can think of, I guess it's time to sharpen them. A Jende plate would be nice to have!

    I have many knives and my ceramic stone is starting to near the end of its life ( 20 years of use !) Id love to have a more modern and easier way to sharpen my knives and this would allow me to have that and still have money to make some of the recipes from this years Celebrate Sausage!     I watched your sharping video and since I have been making do by using a glass plate from my wife's wall shelf it's a 1/4 thick.

    What a great looking recipe and so different from straight meat. Thanks Eric. Got to try. 😋. Also, one of weaknesses of my kitchen is no decent sharpener. All I have is the little pull through ceramic sharpener. I’ve never figured out a great sharpener for my knives or grinder plates. I sure know that I need something good though. Good luck to all. 😇👍

    Most fermented sausages that I am familiar with are salami. This one is very different. Gotta try it!

    That looks interesting. I've had minimal exposure to Swedish cooking so maybe I'll give it a shot. As always, great video! Also, for those of you not tending to your plates and knives, get to it as it makes a huge difference.

    Between you and the Canadian Duncan Henry I love watching others make sausage. The sharpener kit would be amazing as I use a very flat desktop and wet sand paper rn and the flat plate would be so much easier.

    I'm using my grandmother's old Grinder from the 70s. I have entered the drawing for season 5 episode 1. If that doesn't work out this old grinder could use a new Edge. We'll see how this raffle goes. Thanks Eric

      Those old grinders are great, it’s so important to keep an edge on not only the knife, but the plate as well. They cut so different after sharpening.

    Hi Eric! I'm a huge fan of your channel and usually sharpen my gear and knifes using your technique. In particular, I used a wet towel, a cutting board and the sand paper. It works well but could be better 😅!

    There is an Italian sausage like this, called ciuiga. It's a bit of tangy taste, there is fresh (to be boiled) version and smoked / fermented version. I know only that they put boiled turnip in it. It's late autumn seasonal sausage in region of Trentino, and it has quite a story on how they invented it.. I bet that this Swedish sausage is very similar to ciuiga. 👋

    I could definitely use a Jende system. Since I found your channel years ago I've been using my old #8 grinder alot. When blades got dull I would just buy new ones. I have many dull blades and plates

    I’m eating this for dinner tomorrow! But as I live in Sweden, I will buy them at my local store. Even though I’m a sausage maker, it’s not worth the effort. The isterband sold in every store in Sweden are of really good quality, and they are cheap 😀

    I do not have a lapping plate, so I know this would help, as I use a cutting board with sandpaper at this time. This would go a long way to help! Also, in Canada, barley groats are are called "pot barley", which is basically hulled barley in other places. It's just a tad rougher than pearl barley in case anyone else is reading and wondering.

    I could use the sharpening system for some old blades that were gifted to me. I was given an old # 32 commercial grinder that was from an old butchers shop and the blades and plates definitely needed sharpening and squaring up. Thanks.

    Love trying out new sausage recipes and your channel is a gem. The sharpener is something I've been needing for awhile now, especially with hunting season about to start. My grinder plates are getting to the point where on course grind sausages I'm getting strands instead of clean cut chunks.

    You might try adding some diastatic malt powder into the mixture as you combine it just before stuffing. It will break down some of the barley's starches to add a bit of a malt flavor and sweetness to the sausage. Depending on how you do that, it could even allow you to ferment the sausage to a lower pH and still balance the sourness some with those malt sugars. Something to think about and perhaps experiment with maybe.

    Love the series and am working toward getting started making my own sausage.
    As a restaurant manager, hime cook, and hobby woodworker, I truly appreciate sharp tools. But I am seriously lacking the right tools in my kitchen. This sharpening system would be a great addition for me.

    Oh I would LOVE to win the sharpening kit from Jende Industries. I started out my sausage journey a few years ago. Bought things I needed on a budget. The meatgrinder was one of the things that I really needed but I soon realized that the grinding plates had scratches on it. I would really need to sharpen my grinder plates and other equipments. Much Love from Sweden for presenting the "Isterband" I love that sausage. We serve it with coarse mustard and potatoes in dill-white sauce (bechamel). Preferably with a tall cold beer. I like my Isterband on the tangy side. And one more note; Isterband is normally not very snappy. They should be a little bit crumbly. An easy way to cook them is to score them lightly and pop them in the oven. A very summery thing to eat for lunch.

    Love your channel and I've been watching for years. I have several projects working in my homemade curing chamber as I type this note (Calabrian pork, Capo and some Bresaola.)
    I don't think there's a better reference for making sausage than yours on the internet.
    Love to be the winner of the grinder plate, as I'd be the envy of all my buddies at "Sausagefest" next spring. What is Sausagefest, lol? Just a bunch of grown men making sausage for a weekend down in the beautiful state of Arkansas. (They'd all buy one.)

    While I appreciate the many types of sausage from around the world and respect people's varying tastes in them, my left arm started going numb upon hearing that Isterband is a 50/50 blend of meat and fat! Nevertheless, I watched the entire video and learned a couple things along the way. Thanks, Eric, for covering so many types of sausage during your October series!
