    My happy memory of living in Paris 20 years ago, was having a warm baguette in my arm while walking home and trying very hard not to eat it all before arriving at my apartment.

    French here. My Grand Father was prisoner for 5 years during WW2. He was a baker before the war. His own boulangerie-patisserie in south west of France (near Biarritz).
    His Stalag XIII prisoners camp was the only one who had the chance to have bread almost every day. But above all they had white bread, which was extremely rare at that time. Because he managed from time to time to find wheat flour.

    Because of the cartoon Tom and Jerry, my dad called Baguettes as the bread that you hit people with 😂. Hahaha. But i do love some freshly baked baguettes with some tuna mayonaise spread. Yums❤

    I hear that the European wheat is better than American wheat. I also wonder if the proofing time is a big factor in developing flavor. Slow food?

      It's their water... And American wheat came from Mexico via Spanish bringing it over with Columbus.

      It’s more a matter of flour quality…
      In France (and Europe in general) there are way more flour type with specific numbers depending on the raffinage of the flour : T45, T55, T65, T110, etc…
      The varieties of cereals grown in the USA and the methods of making better flour are not the same. The grain density is different, flour does not absorb liquids in the same way, and therefore the finished product is different. They contain less protein than French flours.
      In addition, unlike France, the USA offers bleached and/ or enriched flours. In concrete terms, this means that they have undergone a chemical treatment with chlorine or bromine and that they contain other ingredients than cereal, such as niacin, iron, thiamine mononitrate, riboflavin or folic acid, except for certain organic or whole wheat flours.

    But you didn’t talk about leaven. LEVAIN in french or sourdough. sourdough is the most important ingredient in bread making. Some bakeries have a sourdough that is over 100 years old and which they still use today. because leaven is a living matter, which bakers cultivate. it's totally magical. this ingredient allows the dough to “rise” and create this aeration in the dough. this is the secret of French bread.

    Quand j'étais étudiante, j'ai eu quelques difficultés financières, alors pendant une semaine j'ai acheté une baguette chaque jour, et c'était mon repas. Mais le pain est bon, alors je l'ai bien vécu. Juste le pain, sans rien d'autre, et j'avais du plaisir à manger

      Still one of the cheapest good things you can eat today : 95 cents for a baguette and 1,30€ for a tradition baguette. And you know what’s inside.

    What a bunch of crap romanticized bread??It was made so the people can survive and you also have the pain or flute in some region the baguette,the batard in Paris,the ficelle,the Couronne,the gros pain the boule..

    Why has M NEVER mentioned HOW she got help from her mental problem? Not one word of therapists, therapy, doctors, medications, shock treatments, etc. Her severe problem just miraculously disappeared into thin air in Canada or the USA? I don’t get it. IF your helping the public I’d think you would discuss therapy options or where to reach out for help. IF her mouth is moving she’s lying!!!!!!!! If she’s saying she’s still a danger to herself then her household needs a welfare check-what keeps her ftom offing the kids & herself? Makes no damn sense these lies of hers.
