    What kind of steam do we use... superheated or saturated.? if any of these can be used.. what effects will they have on product quality?

      We use the saturated steam in this case & if we used the superheated the previous equation will no be applicable

      It it stated in the problem, saturated steam will be used

    I can't understand the balance of L+S=B+V; If i say in=out, then it is L=B, isn't it?

      I assume you are talking about the balance that is written at 7:05. Yes, L(bar) is going in and B is coming out, but S is also going in and V(bar) is also going out. You must also include those two streams.
